  1. A good, sharp chef's knife. Nothing fancy, I use a Dexter that I got for like $20 and have it resharpened. You can get a lot nicer, but you don't have to. The first kitchen I ever worked at (20 years ago) used knives almost exactly like this.

  2. A good meat thermometer. I use this one which works similarly to a ThermaPen but without the ridiculous ~$90 cost.

  3. A good cast iron skillet can be pretty versatile. Cast iron holds heat very well, which means that it's great for stuff like searing steaks.

  4. Some cheap, non-stick frying pans. I recommend getting cheap ones because once the coating starts coming off (and it always does at some point, it seems) you're going to throw them away and get new ones. You can spend $300+ like I did once and get high-end stuff like All-Clad or whatever, but even if you're super careful and use only wood and silicone utensils to cook on it, it'll still start peeling its coating, and then All-Clad will say you used metal silverware on it and your warranty is invalid, blah blah blah, and that's more hassle than you need. Just get cheap ones.

  5. Now THIS is where you can spend some legit money. A tri-ply, high quality frying pan without a non-stick coating. These are great for making pan sauces while you cook, etc. I made a chicken, garlic, and olive oil with a red wine vinegar based pan sauce with this pan (well, and some baking dishes) that was incredible. All-Clad is the industry standard but the Tramontina stuff is 1/2 the price or less and built to near the same level of quality.

  6. A nice, enameled Dutch Oven, whether it be from Le Creuset or Tramontina, these are the best for stews, soups, chili...etc. Hold heat forever, well built, and easy to clean.

  7. A good fish spatula, which I almost never use to cook fish. It's actually just the best shape for omelets, eggs, whatever. Flipping anything in a pan with a utensil like this is awesome.

  8. A thick ceramic baking dish for making things like lasagna or casseroles or even just roasting meats/veggies.

  9. Believe it or not, cookie sheets covered with heavy duty aluminum foil are how I do a lot of my oven roasting of small things, like diced veggies or potatoes. They work perfectly and being so large they're able to be spread out so they get roasted on all edges for a little extra flavor. Brussel sprouts & diced bacon in a cast iron skillet to start and then dump them onto this and blast them in the oven at 425 for 15-20 minutes and you'll have a great side dish.

  10. No matter how careful you are, you're going to get something caked on or get a dish so dirty you think it's uncleanable. For that, I recommend Barkeeper's Friend which is an awesome powdered cleaner. Add a little water, use a paper towel and this stuff to make a paste, leave it in the pan for a few minutes, then rinse. I have yet to see this fail. Awesome stuff. Saved some pans.

As someone else said, Kitchen-Aid standing mixers are awesome, but hella expensive. So unless you were planning on spending A LOT, maybe try something like this:

If she is geeky: Williams-Sonoma has Star Wars and Marvel cookie cutters/cupcake kits/cake pans/pancake molds/etc.

Mixing bowls are always a must, these are super cute and colorful, and have a grip and spout so they're easy to pour, and they have great reviews.

Here is a good set of different baking pans, I actually got this for my last birthday and they're great.

And since you said she likes cupcakes primarily, maybe a cupcake decorating book, icing tips and etc., cupcake recipe book, or maybe more generic baking-wise a cute apron or a cute recipe box. Good luck, I'm sure whatever you get her she'll love! And kudos to you for trying so hard to find a great gift for her. :)

  • Bread for sandwiches - LC Foods has a pretty good White bread mix. I usually just use a Mission low carb tortilla and make it like a panini/quesadilla kind of sandwich thingy instead. But then, I like hot sandwiches...

  • Tortellini pasta - Sorry, no help for you there, but I do make "ravioli" (recipe below).

    > 1 oz, Cream cheese
    >
    2 egg
    > 0.50 cup, shredded, Cheese, mozzarella

    3" whoopie pie pan with at least 12 spaces

    >Microwave 1/4 cup mozzarella until melty. Add cream cheese and egg and mix thoroughly. Spray pan with oil and divide mixture equally in the 12 spaces.

  • Gnocchi - The Primitive Palate Garlic Gnocchi. Note: I actually like to refrigerate them overnight before adding them to the soup. I think it makes the texture more on par with a potato gnocchi, but then I'm not exactly the leading expert on Italian food so YMMV.

  • Base for Chicken and Gnocchi Soup, or use your own. Mine comes out to 8 servings and around 410 calories and 4g net carbs per serving not including the gnocchi.

    Bonus:

  • LC Foods also has a really f-ing good cheesy biscuit mix.

  • I prefer Great Low carb Bread company's premade pizza crusts, but then there are so many pizza crust recipes it might not be worth it to you since they are pricey. I like them because they are easy to take to work with some sauce, cheese, and pepperoni and have a quick and easy lunch.

  • Netrition.com is a great place to go for premade low carb products. You can find LC Foods and Great low Carb Bread Company products there along with Dixie Foods and others. Shipping is only like $5 for the whole order so it helps to reduce costs there.

I'm always trying to find new dessert recipes for my Instant Pot...cheesecakes always come out good, as does dulce de leche, various puddings (bread, tapioca, rice, etc.), and compotes (blueberry compote on top of pancakes, waffles, and ice cream is ridiculous!).

A couple years ago I perfected triangle hand pies using a cubed apple compote with corn syrup (for the gel effect) & puff pastry, plus corn syrup & powdered sugar icing for that nice glaze...used the Instant Pot for the filling & the oven for the puff pastry (I just get the frozen sheets, nothing fancy), super easy & comes out great!

It's a little tricky in that Pizzacraft has earned a special place in hell for duping so many unsuspecting people into falling for this:

but... there are elements that I really like about the PizzaQue, elements that the far more expensive Kettle Pizza doesn't even incorporate.

First, the tilt is brilliant, because it gives you room to launch and tend, but it still gives you a lower ceiling in the back, and helps, to an extent, balance the top and bottom heat. The Kettle Pizza started off laughably tall, then they lowered the profile a bit, but they're nowhere near this. A steel plate for the top would be better than the Weber lid, but, out of the box, this should be able to do balanced 4 minute bakes no problem, which is crazy for a $70 piece of kit.

Second, the cage for the charcoal and wood is incredibly inspired. If you have any flame/charcoals directly underneath the stone, it superheats that edge, and burns the pizza- and also shortens the life of the stone. Maintainig indirect heat by using the cage could easily be one of the smartest things I've ever seen any of these BBQ/grill insert manufacturers do.

Speaking of indirect heat, I think that using an insert like this with an 18" Weber could be a little cramped. You want to have plenty of space for your charcoal and wood.

As far as using this for Neapolitan, you can certainly pick u/J0den's brain on his mods, and I can help as well, but, I think, at the end of the day, it's going to get pretty involved, while a 4 minute NY bake with the stock setup will be a no-brainer- and light years ahead of a 500F home oven.

First, change your idea of the word healthy, because it does not have the same meaning for everyone. I suggest defining exactly what it is you are trying to achieve (i.e., weight loss, less saturated fats, more balanced diet, etc.).

    Disclaimer: For chicken, pork, or beef, this is assuming it is a solid cut of either (i.e., breast, chops, steak). There are many other types to choose and cooking methods, but I am limiting the options strictly for clarity. I also won't be covering any other proteins in this comment, but I can get into that more if requested.

    All of these can be pan fried. Use a stainless steel pan, or any other pan that is not non-stick. Pan fry on med to med-high heat, using about one tablespoon of oil per piece of protein, until minimum safe internal temperature is reached. Buy and use an instant read thermometer!

    Once cooked, set it aside on a plate to rest (ideally on a wire rack in a quarter sheet pan; completely optional). Since you didn't use a non-stick pan, you should be left with some brown bits on the bottom of your pan. Pour about 1/4 cup liquid into the hot pan over medium heat (water, stock, white wine), add more if it evaporates quickly, scrape up the brown bits. Whisk in accumulated meat juices. Off heat, whisk in two tablespoons of acid (vinegar, lemon juice), whisk in two tablespoons of butter. Taste first, and then season lightly with salt & pepper, and then taste again.     Clean and cut veggies into bite-sized pieces (about one inch). Even cuts is the key to even cooking. In a large bowl, toss the veggies with some oil, salt, and pepper. Spread veggies onto a half-sheet pan in a single layer and roast in a 425F oven for about 10-15 minutes, or until veggies are soft, or cooked how you like them. You will have to experiment with the size of your cuts, the oven temp and time. Some veggies take longer than others (carrots). You can try broiling at the end to get more browning, but don't walk away.

    Cooking the starch


    Potatoes can be tossed with oil, salt & pepper in the same bowl as the veggies, and then cooked right along with the veggies in the same half-sheet pan. They usually take longer to cook than, say, broccoli, so cut the potatoes a lot smaller than the broccoli, and it should all be done at the same time.

Please for the love of delicious beer do not boil your grains. To secure the bag what I did was wrap a bungie cord around the top of the kettle with the bag secured by the bungie cord. It worked out really well.

What I do is I have a metal cooling rack like this one and after the mash. I remove the grains kind of roll them up and put them on the cooling rack above the pot. I then let it drain for 10-20 minutes while it starts to get up to a boil. I then put the bag in a pot and bring in the grains.

I did 3 gallons for my first BIAB and probably will continue to for a while. I like the fact that I can brew more often brewing 3 gallon batches and it lets me experiment more. Also expect your efficiency to be low. You can compensate by getting more grains or have some DME on hand and adjust anyway. I think it is big enough for 5 gallons. remember after the fact you will want about 6.5-7 gallons of wort after the extraction so you might need about 8-9 gallons to start with. Add in the grain volume and you might exceed the 11 gallon capacity for some beers.

Here is a good video about the BIAB process and the merits behind doing 3 gallon batches at least at first.

Silly Europeans and your metric system.

First, take 4 eggs and (2/3 and 1/4 cup) of sugar. Beat the eggs and sugar until fluffy.

Strain(sift?) (little less than half a cup) of wheat flour, ( ~ 2 cups )potato flour(2.5 cups flour total), ½ spoon(I'm guessing teaspoon?) of baking powder and stir/mix until even.

Put baking paper on a tray and spread the dough evenly. Place in the oven pre-heated to 350 F for about 15 minutes. Watch the dough, it's ready when it becomes golden colored.

Once ready, get it out and flip it upside-down onto a new tray that has sugar spread on it. Remove the baking paper immediately, if it's stuck to the dough, use a wet cloth to dampen the paper before removing.

Take a springform cake pan (cake pan with a removable bottom) link, place baking paper at the bottom, shut the cake pan. Use the pan to cut the circle shape from the dough to be the bottom layer of the cake. SAVE THE REMAINING DOUGH!

Make some dampening liquid. half a cup of milk, ¼ tsp vanilla sugar and approx. 1 tsp sugar. Dampen the dough you just placed in the pan.

Take approx. 1½ bananas, cut up into pieces, place them on the bottom.(of the pan?)

Take (2/3 and 1/4 cup) of curd(I'm thinking the closest is cottage cheese, but I can't imagine that in a cake. So I'm gonna say use cream cheese, one to two packages) and ~5.2 oz of white chocolateThats about one whole package of this. Melt the white chocolate and mix it with the curd. Add 3 tbsp of sugar, 1 tsp of vanilla sugar.

Take 3-4 discs of gelatin and put them in cold water. (you can probably subsitute one or two packages of flavorless gelatin powdered packages

As the gelatin is in the water, beat some whipping cream.

Take the gelatin discs into a cup and put them into a microwave for 20-30 seconds. Pour it into the curd-chocolate mix and stir it well. Afterwards add the whipped cream and mix it until it's a uniform mass. Spread it evenly on top of the bananas.

Use the dampening liquid on the dough pieces left behind (on one side only!). Place them on top of the curd-chocolate-gelatin-cream layer with the damp side pressing into the layer and use the dampening liquid again on the top side.

Afterwards, put a mix of frozen berries on the top layer (make sure they're totally frozen).

Boil either 2 cups of water with juice concentrate (blueberry concentrate works awesomely) or two cups juice. Once it's at a simmer, pour (2/3 and 1/4 cup) of jelly sugar (to make Jello) and stir(Get a package of jello, mix it up and pour it on top of the fruit). Once it starts to boil, take it off the stove. Let it cool down a little and using a tablespoon or something similar, slowly pour the soon-to-be-Jello liquid onto the frozen berries to finish the final layer of the cake.

Place it in a cool place (outside/in the entrance hallway if you're in Scandinavia, refrigerator if you're in a warm place) overnight and it'll be ready in the morning.

Use a knife to cut away the sides from being attached to the cake pan before removing. Use extreme caution when removing the cake from the pan.

You could make a sourdough starter. It'll take about 1-2 weeks so hopefully if you start now it'll be ready once you need it. I had the same problem and it was really frustrating. I even have a nice pizza peel but I couldn't freaking slide the pizza on the stone. My method was to get all the toppings and everything ready by the oven, get the dough onto the stone and then super quick sauce and top it and then close the oven.

Super lame and very frustrating.

I make almost everything from scratch but have yet to perfect a pizza crust. We typically buy them premade and then add our own spices, sauces and toppings. Our favorite is Still Riding Pizza which is very close to an authentic thin crust, easy to make and the cheapest crust I've found on the GF market. Our second favorite is Against The Grain and comes in second because it has the taste and texture of a pastry dough (like Croissants) but crispier around the edges. Whatever you make I strongly suggest using either a pizza screen or a pizza stone to improve texture.

Okay, so a while ago I said I was going to make a gummy bear tutorial and I never did so I thought it was about time I at least made a write up for them. This recipe will get you right around 200 gummy bears.

Tools:

  • Small non stick pot with a lid
  • medium non stick pot
  • 60ml Syringe - Here
  • stiff silicone spatula - Here
  • 2 small pyrex dishes - Here
  • Candy theremometer - Here
  • Fork to stir with
  • Gummy bear molds (or any other you like) - Here I also just found these
  • Measuring Cup
  • Measuring Spoon
  • Strainer - Here
  • Medium/large bowl
  • Partchment paper
  • A few large tupperware containers
  • Dram droppers for the flavorings - Here

    Ingredients:

  • 1 Package of Jello (85 grams if you have a scale) in the flavor of gummies you want
  • LorAnn oils concentrated flavorings - Here
  • LorAnns oils mold Inhibitor - Here
  • LorAnns oils Preserve-it Antioxidant - Here
  • 5 Tbsp plain gelatin powder - low quality / less chewie here High quality / more chewie here
  • 1 tsp of Soy lecthin powder - Here
  • 1/2 cup of Real Fruit juice of the flavor you want to make, get creative here, needs to be cold. Cold water can also be used but the flavor is not as good.
  • 1/4 cup of sugar
  • Glycerin - Here
  • 6 grams of Concentrates (AKA: BHO, Shatter, Wax, Oil, Hash oil, etc)
  • 1 Tbsp Coconut oil
  • Cornstartch

    Decarbing

    Pre-heat your oven to 250F - 260F, use the digital theremometer to keep an eye on the temp to make sure it stays around there and does not get above 260F. I like to place my concentrates into the small pyrex dish and decarb in that. Put the dish with your concentrates in the oven for 30 minutes. You can check it around the 30 minute mark and see if it is fully decarbed. Look for it to be pretty clear of all little "carbination" like bubbles. When those are mostly gone you are done decarbing. It will take around 30 minutes. Go a little longer if you want couch lock / sleepy time gummies.

    When it is done decarbing pull it out and set it to the side for a minute.

    Infusing the coconut oil

    Grab your medium sized pot and put a few inches of water in it. get it to a boil then turn the temp all the way down to a very low heat. When the water is ready place your dish with the freshly decarbed oil into the water bath and add the 1 Tbsp of coconut oil to the dish.

    Let the two mix for a few minutes until they are nicely combined. It shouldn't take long maybe 10 minutes max.

    Grease your molds

    At this point if you dont have silicone molds (I do and I still grease mine for precautions) grease your molds so you don't forget to do it before adding your gummies.

    Preping fruit juice (or water)

    In the second small pyrex dish pour your real fruit juice / water or whatever base liquid you are using for your gummies. I havent tried much besides fruit juice and water but you can experiment with other liquids, but don't do an experiment on a batch with THC in it just in case something doesn't work out.

    To the fruit juice / water add 1 tsp of soy lecthin and stir with the fork. Place the dish in the fridge for 5 minutes or so and stir again. Let it sit in the fridge stirring occasionaly until the soy lecthin is fully desolved.

    This liquid mixture NEEDS TO BE COLD for the blooming process to work so make sure to keep it cold.

    Mixing the dry ingredients

    In your small non-stick pot mix the following together: 85 grams of Jello, 5 Tbsp of Gelatin, 1/4 cup of sugar. Completely mix them all together and dont let any of them get wet yet. Stir and stir until they are completely mixed.

    Blooming

    Take your mixed dry ingredients and pour in your friut juice (water) soy lecthin mixture. Stir it and get everything evenly mixed and make sure there are no lumps. When everything is evenly mixed place the lid on the small pot and let it sit for 10 minutes.

    This is called "blooming" the gelatin and allows the gelatin to absorbe the water. The water needs to be cold because gelatin activates at about 120F and after that will start to set when it cools. We don't want it setting right now.

There's something that I feel I should share with you, but you need to understand that you cannot eat the whole jar. You have to savor it. Lots of savoring, since it's pretty calorie dense, but it's my single favorite thing in this keto world. I like to nom it while I watch Dr. Who and drink Fresca...

I give you... chocolate almond butter.

I take about one serving size and put it a glass salsa/sauce cup, kinda like this. Don't try to put it in a real cup or in a bowl, it'll look pitiful. Anyway, once you have it in this little bitty sauce cup, eat it with your spoon... very slowly. I like to have it to absentmindedly 'munch' on because I can dip the very tip of the spoon in it and eat it. It's really strongly flavored so you don't need much at all.

It gives the same kind of experience as eating popcorn or ice cream in that it gives you something tasty and something to do with your hands absentmindedly while you focus on other things... but because it's so strongly flavored you can consume less of it and get the same enjoyment.

Most of my carb allowance is spent on almonds, either in this form or in this form.

What does your kitchen have? Stovetop (gas/electric coil/induction)? Oven? Microwave? Hot plate?

If you're willing to learn how to treat cookware properly, pick up a cast iron skillet. Imo they are the best value you can find. /r/castiron

Get some silicone kitchen utensils (something like this ). Doesn't melt as easily as plastic does

I'd recommend getting a single knife and cutting board. Plastic or wood board, and a 8-10" chef's knife. If you feel that that knife is too unwieldy, you can also pick up a smaller one.

Pick up a stock pot, I'd say probably 5-8qt

Bakeware is pretty cheap, imo you're best off getting a set ( e.g. ) /r/baking

Also look at possibly getting a slow cooker. While not necessary, I love mine. If you have the money to spend, get a programmable one. If not, pick up one at a yard sale or thrift store (just make sure the crock isn't cracked) /r/slowcooking

Some quick questions:

  1. Any tips for freezing dough? My #1 recipe is the Roberta's Pizza Dough Recipe and my #2 is the NYT Pizza Dough Recipe. At what point in the process can I freeze the dough? How long can it last in the freezer? How should it be stored in the freezer? Put it in a freezer bag & get all the air out?
  2. How long do you think I can freeze store bought pizza dough? Recently I bought premade pizza dough and it was frozen, I kept it frozen a few days and I made it today, it turned out great. If it can last a few days frozen can it last a month?
  3. I'd love to know how to make a thin crust pizza that ends up looking like this. Does anyone have a dough recipe that can do that? I've never made thin crust before.
  4. Would this cast-iron pan pizza recipe be considered deep dish?
  5. So the classic deep dish (Chicago style) pizza isn't very appealing to me but a [deep dish like this] (https://holroyd.files.wordpress.com/2010/07/img_5304.jpg) very much so is assuming that's just dough, pizza sauce, mozzarella cheese and pepperoni. Recipe-wise do you think to make a deep dish pizza like that I would basically just take my go-to pizza dough recipe aka #2 and put it into a deep dish pan, put sauce, lots of cheese and then the pepperoni on? Or are there "deep dish" specific ingredients/techniques for me to use?

As a professional baker, there are two books that I recommend:

  • I'm Just Here for More Food: Food x Mixing + Heat = Baking by Alton Brown (gets into the science of baking, it's entertaining, and has some great recipes)

  • Baker's Manual by Joseph Amendola and Nicole Rees (has the most classic recipes, and covers a lot of the things I learned in culinary school)

    I doubt it's in your price range, but every baker absolutely needs a kitchen-aid standing mixer.

    Other necessary items: wire whisk, rubber spatula, good set of bowls, various pans, or at least two half sheet pans, measuring cups, measuring spoons, bench scraper, etc.

    Wilton has a good cupcake decorating kit. Offset spatulas are necessary for any decorating, 4" for cupcakes, 8" for most cakes. If she likes cake decorating, then she needs a cake wheel and a decorating comb.

    I personally go for more practical items as opposed to novelty items. I hope some of that was useful.

Honestly? I Have no idea. I know the recipe specifies it being 16" in diameter though, so that's why I'm assuming it isn't grandma style. I never saw her bake it, my relationship with her was when she was in her late 80s to early 90s. I just assumed that a stone would be the best way to do this

Definitely get a crockpot. We routinely make pot's of chili on the weekend or cuts of meat to use for lunches during the week. Also my food processor has become one the most used items in my kitchen...lol.

Something else I recommend are whoopi pans I use these routinely with my basic bread recipe.

By basic bread I mean it can easily be altered to be used in different ways. I've added Parmesan and garlic to make it a garlic bread, I've added vanilla and cinnamon to make it more like a pancake.

  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp psyllium husk powder
  • 6 tbsp golden flax meal
  • 1 tbsp heavy cream
  • pinch of salt

    Directions

  1. Preheat your oven to 350.
  2. Spray an Oopsie roll pan (muffin top pan) with cooking spray
  3. Scoop evently into Oopsie roll pan.
  4. Bake for 10 minutes and press one bun with your finger, if it is firm, they are ready to go!

    The whoopi pans make them the perfect size for sandwhiches or hamburgers.

    Anyway I hope this helps :)

From there, you just need to figure out which nail you want. Hymanquartz has a few that I would recommend: 4mm, 3mm, and thermal p bangers. He also has carb caps for the first two (thermal p comes with one), some of which have dabbers as part of it. Some other vendors like volcanee have 25mm bangers as well.

Here are some more carb cap (1, 2, 3, 4) and dabber (1, 2) options.

You could also get a a reclaim catcher (1, 2, 3) or a dropdown (1, 2) but they're absolutely necessary, it'll just keep dabs from leaking into your rig. I do think it's good to have an extra piece of glass between your piece and your nail, though.

It takes tons of practice. I've made a lot of pizza at home, and my dough-tossing skills are still a bit shaky. Just remember that softer dough is easier to toss, so be careful not to over-knead it. Also, if you buy ready-made dough, be sure to let it sit out to warm up to room temperature. And catch with your knuckles, not your fingertips.

Rolling pin works, too. :)

Exactly. Use the screen just like a pan. No need for a peel.

You could certainly use it in a pinch, but I wouldn't really recommend it. Foil would offer much less support than a screen, so you'd almost need a peel anyway. Plus, the foil lacks the ventilation provided by the screen. A good pizza screen only costs as much as a couple of rolls of foil anyway, so there's really no reason not to use one.

Ovens are usually a little hot for fruits to do well so you can go on for an hour, off for an hour, etc... Until it gets dry to keep from cooking as you dehydrate. Ovens work well for meats and jerkys as I feel most home model dehydrators don't get hot enough to dehydrate meat.

If you do something that's really sticky like pineapple or mango, put the slices on this in the sheet pan. You'll have to turn your pieces a few times but they'll make cleanup so much easier.

A version of this was suggested by another member here, and I apologize, but I can't remember who it was.

I was trying to figure out how to best use Barrister & Mann samples without having tins or Tupperware stacked everywhere. I found a custard dish that was just small enough to wrap a zip lock sandwich bag over the edges. I just mash the sample into the bottom of the bag-lined-dish, which is big enough to load from, and when I'm done, just pop the bag off of the dish and zip it shut. Keeps the soap from losing its delightful smells and when I want to use it again, just toss it back in the dish to load.

It's not much of a hack, but it saved me a ton of space.

Tell me about pans. Right now I make one pizza on a stone and one in a cast iron frying pan, but I'm thinking about branching out into pans. But I'm not sure what the difference is between all of them.

I like a thicker crust (usually). I was looking at a couple:

Both. I've only found a couple packaged sauces I enjoy and they're hard to find, so I've been making my own lately. Just lightly blending a can of diced tomatoes with some salt, oregano, basil, etc.

I like a thin crust, medium sauce, and medium to light cheese and toppings. Too much sauce or cheese on a thin crust and it won't get crisp.

No, you definitely wouldn't want to use a cutting board to cook it on. I suppose it's possible to use something like a sheet pan, but I would recommend that if you're serious about making pizza you should consider investing in a pan just for pizza. You can get one for $10 and it's worth the investment. A pizza stone will run around $20 for the cheaper ones.

An alternative could be making a deep dish or a pan pizza in a cast iron skillet! If you have a skillet that can be a great option.

Although I wish I got a bigger one than 32 qts, I just accomplished a 15.2 lbs BIAB mash in it with 71% efficiency (5 gallon batch). The only challenge is lifting the heavy bag out of the pot. I let the bag drain over the pot using one of these and it made it fairly easy.

You can make good pizza in a sub-500 degree oven. Try Pete-zza's papa john clone. http://www.pizzamaking.com/forum/index.php/topic,6758.msg59217.html#msg59217 The nice thing about this recipe is that you don't need a stone and peel and you can make it in a sub-500 deg oven with great results.

You'll need a pizza screen, but you should be able to pick that up for ~$3 at a restaurant supply store. Around here we have GFS Marketplace and that's where I got mine.   1. You'll probably want at least one non stick pan for eggs. Teflon is not harmful provided it's not heated to around 500F. It's used in medical implants and is totally inert in the body.
  2. Generally it's better to go for quality, but you don't have to go all out. For any of the big premium price names, there's a mid priced brand that's virtually the same product. Stuff on the very low end tends to be trash.
  3. You should have around a 10" nonstick pan, an oven safe 12" pan you can use at high temperatures, a 4-6 quart pot or dutch oven, and maybe a larger stock pot. Supplant that with some baking sheets and you've got enough to cook for 4-6 people or so.

I do the same! But if you wanna save some time on the eggs, I cannot recommend whoopie/muffin top pans enough. They're the perfect size! Just pop an egg in each spot (sometimes I add an extra yolk too), and stick it in the oven at 350 for about 10 minutes.

We had leftover steak from a parrilla, so we brought it home, chopped it all up and made tacos. You can make my cheese shell microtacos in the same muffin top pan you use to make my cheesebuns. It makes 6 slightly bigger tacos instead of the 12 tiny ones with the whoopie pie pan.

For the cheese shells we used the Cheddar & Asadero blend from Kraft which is our favorite because they add taco seasoning to the cheese.

MICROTACOS

Ingredients
1 cup shredded cheese (we use this taco blend)
½ lb ground beef (or steak, chicken, etc.)
Chopped onion and seasoning to taste
Optional: guacamole and sour cream

Directions

  1. Preheat oven to 350°F.
  2. Fill bottom of whoopie pie pan (or muffin top pan) cavities with shredded cheese.
  3. Meanwhile brown ground beef, onions and seasonings.
  4. Bake cheese for 4 minutes (the cheese will be soft and bubbly, but will firm enough to close the tacos over the filling).
  5. Add ≈1 tsp of meat onto one half of the melted cheese. Gently fold the cheese over the ground beef side to close. Repeat.
  6. Bake 15 minutes to re-melt the cheese and solidify the taco shape.
  7. Fill with guacamole and sour cream before serving.

I have found a muffin top pan makes the perfect size egg for sandwiches. I crack an egg in there and break the yolk, or scramble it or whatever. Then bake in a 350 oven until set.

I love these for roasting. Heavy gage, no rolled edges so water can't collect... beautiful. I noticed an instant improvement in my roasted veggies and meats when I got them; I actually gave away a small stack of kitchen equipment that because obsolete once these entered the kitchen. Hairdryer should be safe, so long as you don't choke the flow. I'd recommend laying the components out on a grate (or just put small items under the corners if you don't have one) to get airflow underneath, setting your hair dryer to full blower/moderate heat, and letting it blow on the components over night. Probably good to turn them at least a couple times. Your case should also be dried, because water can be trapped between metal surfaces and promote rust, and may wick or drip back onto your components when you reinstall them.

If you have more than one hair dryer in the house, I suggest employing all of them. Hair dryers only; no heat guns. (Obviously.)

Ramekins are really cheap so it wouldn't be a bad idea to get a set. (They're super-versatile and can handle ovens, freezers, and dishwashers!) If you want something close to fool-proof that will definitely look presentable, that's your best bet.

If you want to try this in a full-size pie pan, you can try modifying your pumpkin pie filling recipe a bit. (My concern is that the slices will get a little wobbly and won't hold their shape when you cut them.) Adding an extra egg and reducing the amount of liquid could do the trick, but you may need to do a little troubleshooting.

I bought the Pizzacraft 14x14 steel and love it. Can't comment on differences in steel thickness. The idea of a steel is that it has very high thermal conductivity - it transfers heat FAST. So it doesn't necessarily need to hold onto heat, meaning thickness isn't that big a factor.

I use the steel on the very bottom rack and a pizza stone 2 notches above that.

you'll save money in the long run if you do the cost with an initial investment of $55, 35$ pizza steel and $20 pizza peel

Cost of packaged ingredient(Assuming basil is free):

$4 for cheese

$3.49 for centos tamto puree

$6.49 for king arthur bread flour(2270g)

Now for the cost of a one pizza(270g each) not including cost of water and salt:

$0.48 for 133g of flour

$.44 for sauce(1/8 of puree, it usually takes me 8+ pizzas to use the entire can)

.8$ for electricity assuming 5300W/1000w * .15kwh = .8$ 550F @45m-60m baking time

$2 for half cheese, it takes half a mozz for a one pizza

that's a total of $3.72 for a ~12" pizza.

assuming domino's prizes $8 * CA tax(1.08237) - 3.72 = 4.93896 in savings

at this rate it would take only take 11-12 days to get your money back, if you consume one pizza on a daily basis. And this is assuming you didn't buy anything in bulk prices.

No sugar was considered, because using sugar is stupid and the bread browns well enough without sugar. No need to bring more sugar into your life.

I use these and they are great

I'd recommend just tossing them in olive oil and your seasonings. I usually do mine at just under about 1/4 inch thickness. They might stick a little bit, but these pans are phenomenal. Just make sure you wash them the second you get them.

I made them myself. Melting chocolates are relatively inexpensive (you can find them at most any craft store) and I ordered this mold off of Amazon.

I'm a complete pizza novice but I know how to cook.

I quickly glazed over a guide and it said letting the yeast ferment/sit 24 hours prior to cooking is essential. How essential? Are talking night and day difference of taste?

Third; altitude should affect cooking time and taste right? I'm by the rocky mountains in Canada and we sit at exactly 1,045 m (3,428 ft) . Will this affect it dramatically?


Fourth : Think it's overkill if I use some expensive (mostly tomato) pasta sauce as my pizza sauce? I hate pizzas with cheapo sauce. But then again I heard I should just make my own?

I'd highly recommend either getting a pizza stone or a pizza steel (which I'm dying to try but can't justify purchasing right now). I just don't think you can get the same sort of crust without it. There are pizza pan alternatives you can buy ([like this. No Costco neer me carries these chips so I Took this pan $8 and added 1tbsp parmasan cheese. Heat oven to 400°F and bake for 6-8 minutes. They are fantastic!!

I've been making different kinds with red pepper flakes, or Italian seasoning, or a rub I use for my smoked tritip.

They are also good with the chipotle Bitchn sauce.

I use the below pizza stone and pizza screen. Make sure to pre-heat you oven for at least 30 mins at the highest temp possible. Mine goes to 525 and I cook for 12 mins, rotating 180 degrees 6 minutes. And I let the pizza cool on the pizza screen. Made the mistake when I first got one of trying to take the pizza off it right after coming out the oven.

For my small items, I'm using a Japanese yakitori rack. I place it over my cast iron pan and go to work. The rack kinda looks like this (not my photo).

For bigger items, I plan on using my half-sheet baking pan and a rack. I'm using a set that has been used and abused so I don't care if they get discolored.

A friend of mine is planning on just putting the meat on his Weber kettle grill, searing, and flipping.

So I made these last night! SO simple, and my husband loved them. This is my new go to. It felt like I had a regular bun, tasted good- my 5 year old ate one that I hadn't cut in two and liked it.
The only problem I need a bigger bun pan. Just felt awkward with my huge Johnsonville Cheddar Bacon 1/3lb patty...

I didn't get it from an online store. I contacted local metal shops and just took the cheapest one. Getting it on amazon would have doubled or tripled the cost. Look at it yourself: I see 15x15x0.25 for $70. I got double thickness, though one square inch shorter, for $40.

Then there's this bullshit which is 0.14 inches thick. Read up at pizzamaking.com why thick metal is necessary.

I use a muffin top pan to get them like that.

I was doing them in ramekins but was frustrated by the small size. These fit one egg mixed with milk in each spot and are almost exactly the size of the muffins.

Side note: when I used nonstick spray on the pan, the eggs ended up bubbly. I used butter on the pans where the eggs came out nice and smooth on top.

I would add a teaspoon of water to each egg cup and then find a sheet pan that fits as a semi-tight lid. The steam will cook the top of the eggs.

I have ceramic ramekins and the ones for my wife I put a plate over, with the water with the egg.

A suggestion for ramekins. 4oz but you can also find larger and smaller cups on Amazon
