Cornbread is an easy one if you use a mix. I like mine sweet with jalapenos- I use this mix and chop up a jalapeno and stir it in. I like mine spicy, so I leave the seeds in, but some folks like to de-seed the jalapeno(s) first. You might want to just leave out the jalapenos altogether though- it's more of a southwest/tex-mex thing than a southern thing. If you overcook it it'll be dry, so make sure to stay on top of it- take it out as soon as a toothpick inserted into the middle comes out without batter on it (it's ok if there are some crumbs, though). Greasing the pan with bacon grease is another great trick - the sweet, savory, and spicy all together is a wonderful combination (even without the jalapenos this is still a great trick). They're best served warm from the oven with butter, and they make fantastic breakfast fare too.
Candied yams is another easy one. Here's a good recipe IMO. Be aware that they're supposed to be quite soft when they're done - almost creamy in consistency- so depending on the recipe you might have to leave them in for longer than it calls for. And yes, it's supposed to be that sweet! It'll probably taste like dessert to you- almost like a pudding. You could also always go the canned route too, but it's not as good IMO. This brand isn't terrible IMO. They'll be a nice side dish to yorkshire pudding and a roast, I think - the sweet and creamy of the yams will be a nice contrast to the fluffy and savory of the roast/pudding. In this case, garlic will still work for the roast, but I'd stay away from rosemary (rosemary + yams aren't the best combination).
Some steamed green beans would be a good addition too, and they're hard to fuck up. Make sure not to overcook them though! They should be softer than raw, but still just able to "snap" when bent in half. And don't add dairy to them- fresh steamed veggies are supposed to be a counterpoint to the richness of the rest of the meal. We add a lot of butter to things, but besides cream in mashed potatoes, most folks don't like dairy in their veggies here (the sole exception being the midwest, who are mostly descended from nordic immigrants- they really like their "hot dish" there, lol).

It sounds counter-intuitive, but the cravings aren't a psychological thing. It's a hormone thing. Go low carb, and it brings your blood sugar down, which brings down your insulin levels, which brings down your cravings. It's actually fairly amazing how well it works for most people. Stay low carb (I completely recommend very low carb, which seems to reduce cravings much better, so here's another vote for r/keto) and the cravings will go away.
For some people the cravings take a while to go completely, and sort of fade out over months. For others (including me), all carb cravings were gone in a week. Now when I have cravings it's for really good Brie, or olives, or bacon (you'd think all that bacon would get old, but it really doesn't).
Pizza? You got it. I like Fat Head better than regular pizza. No, that's not hyperbolic BS. I swear to God that stuff is amazing.
Fried food? Fry away! You can't fry anything with lots of carbs, but fried chicken is a go and fried mozzarella sticks are perfect. Basically you can fry anything as long as you learn how to use almond flour, coconut flour, and crushed pork rinds instead of bread crumbs (ok, I'll cop to cheating a little on this one; sometimes I mix in some panko because it coats better; just track your carb intake and if you're under your carb limit for the day, it shouldn't be a problem).

Honestly, keto is a fucking delicious diet. The hardest part is really that you need to re-learn how to cook with new ingredients. I highly suggest hanging out in r/ketorecipes.

I am a newbie but I heard about carbquick. I have been waiting on payday (tomorrow) to order some but it looks like a nice alternative for someone who can't break their addiction to bread LOL.
Speaking of bread, I tried making Oopsie Bread 2-3 days ago and they were a success!! I used them to make me a real hamburger. Made my whole week.
To hit my sweet tooth, I blend some heavy whipping cream and peanut butter in a blender or food processor, squeeze a couple drops of liquid Stevia, and then freeze it. It doesn't take long to get an ice cream consistency. Or, you can line a plate with saran wrap and flatten the mixture on it, freeze, and then cute it into strips so it resembles a "bark". My kids love it.
I also recommend drinking as much water as you can, I know that helped me. Also if you like ice, munch on ice chips.
For convenience, you might even look into Keto Chow. It's basically a meal replacement shake that tastes really good.
I have seen others mention Halo Top. I have never tried it, but wanted to give you that suggestion.
Fellow celiac here! I have a horrible selection for grocery stores, so I buy a lot of things off of Amazon a case at a time. It is way cheaper than I can find anywhere this way. Stop buying the Udi's muffins. Honestly, they taste like crap and you can make ones that are soooo much better! I like to do a lot of baking mixes so I don't have to guess on what ratios of flours to use. Anyways, here are a few of my favorites:
If you get adventurous and want to try baking your items with a flour substitute, Cup4cup or Better Batter are both great. I've used them both as replacements of regular flour in things I've made and turned out very similar to using regular flour. I also make my own chicken fingers using the GF Bisquick (there is a GF chicken finger recipe on the box). We also eat a lot of rice and quinoa.
The first few months are hard but I promise it gets better and that you’re doing an awesome job. Trying to breastfeed is so so hard and demanding and stressful on top of everything else about being a new mom. I struggled with breastfeeding in the beginning and supplemented with formula for a few weeks before my LO got his tongue tie fixed (we didn’t realize it at first that that was the reason). I know it’s easier said than done, trust me, but try not to feel guilty about supplementing. If you are anything like me, I was determined to be successful at breastfeeding so I tried everything. I was pumping every few hours as well as putting LO on the boob so that I would keep producing. It was a struggle. If you haven’t yet, please try lactation cookies and mothers tea. I will link both. The cookies are actually really good and I swear both of those things helped me produce enough milk. Eventually, I was able to provide for my LO with just breast milk. It gets SO much easier but if it doesn’t work out, it doesn’t work out. The most important thing you can do is focus on your child and give her whatever she needs, be it formula or breast milk.

What helped me the most was time. Seriously, it just took a while to get the hang of a new lifestyle. Over time I felt better and better and learned more easy recipes and cooking techniques and it all became easier.
One thing I missed the most was good baked sweets, but then a friend who's son is allergic to wheat turned me onto this book http://www.cakemixdoctor.com/books/the-cake-mix-doctor-bakes-gluten-free/ and told me, "It'll change your life. I use it for all the kid parties and no one even realizes they're eating gluten free."
Recipes, I haven't yet done the whole make your own flour thing. SO much extra work. I started keto just over 5 weeks ago, but I'm planning a keto Thanksgiving with my best friend (who is also doing keto with her fiance!) Here's what I was thinking:
The two things I'll be missing that I haven't figured out how to keto-fy are green bean casserole (just can't do it without those crispy onions) and sweet potato casserole. I could make my own keto marshmallows for the sweet potatoes, but I haven't figured out the best sub for the sweet potatoes themselves. Anyone know which orangey winter squash is the least carb heavy? My research tells me that hubbard squash is the answer, but anyone know anything better than me?
My wife's milk supply was dropping after leaving NICU and she was trying all different things to help increase it. Not sure which ones worked but her supply did improve within a couple days. Again, don't know how much each played a role but the advice was provided by her lactation specialists and family members that work in L&D.
Cup4cup is flour, made with things that are not wheat - like, rice flour and tapioca and potato starch. I work in a kitchen store, and the gluten-free customers are really enthusiastic about it.
I'm not a health professional, but to my understanding, going gluten-free essentially has no health benefits unless you are Celiac or allergic to wheat or have some level of gluten intolerance. Some people don't even realize their slight allergy or intolerance until they go gluten-free and suddenly feel better. As long as you maintain a healthy balance, gluten-free is not actively unhealthy. You can still eat rice, quinoa, barley, millet, potatoes, and other starches.
The benefits of supporting your spouse and not having to plan twice the number of meals might make it worth a try.
Bonus: Here is an easy way to fix rice, barley, or millet. In a covered casserole dish, combine some rice, barley, or millet with twice as much broth (beef, chicken, veggie, mushroom, whatever you like), cover, and bake at 350 for about 45 minutes. For softer barley, you can add more liquid. Easy squeezy.
Man, I am proud of myself for this one. First, let me specify once again: This is a large, blueberry scone that is only 100 calories and 3 grams net carbs. It's also only 4 (or 5) ingredients, and it's the easiest thing in the world to make.

I haven’t made it myself, but a few friends have with success. It’s a little pricey, but bakes up like normal cake. I’ve seen it for cheaper at Sprouts, you may want to check health food grocers in your area!
I also bake and have made fondant many times (non-keto). I don’t know that you will be able to replicate a sugar free equivalent. Have you considered looking for unsweetened almond paste? Not sure if such a thing exists, but might be worth a try.
For sure! A product called Chebe has been a lifesaver. It is mostly tapioca ("manioc") flour, I think it has some cream of tartar or something else too.
I use the general mix according to the directions on the box, but I do my own thing once the dough is mixed up.
One batch of dough on one cookie sheet will make a thinner crispier pizza that still won't snap if you fold it, thin but not like a cracker.
One batch on a 14" round pizza pan will give you a more chewy and slightly thicker crust.
Follow the directions on the box, but use a tiny bit less water than they say. Only add it if the dough refuses to pick up residual flour in your mixing bowl. It should be sticky but not "wet" when it goes in the pan.
Once the dough is mixed, oil your pan and press the dough in. It's forgiving, so you can manhandle it and smack it around until it's uniform in thickness with a slight dip at the middle. Just make sure there is dough everywhere and no bare spots and you'll be fine.
Bake the crust at 350 with nothing on it for 7 minutes. Pull it out, and slide the whole thing off the pan back into the oven directly on the rack for 8 more minutes. Then pull it out, set the oven to 450, top the pizza, and pop it in whenever. I never time the next part, watch it after 10 minutes for the right level of cheese-browning that you like. I let mine get brown all over.
Its a great mix of textures, crispy and chewy. And it even reheats well!
Not dumb questions at all! So my protein waffles are just waffles made in a waffle maker using a high protein waffle mix. I really like Kodiak Cakes waffle mix because I get great waffles using just mix and water. So no extra sugar or calories. Some people make them using protein powder but I haven't been brave enough for that yet.
& I'm definitely not eating just 300 calories a day, lol. My TDEE (what I burn in a day) is around 1800 calories, so I eat about 1500. Therefore I'm cutting out and not eating those extra 300 calories I burned.

Carbquik + Protein powder of choice + Unsweetened cashew milk = Magical pancakes or waffles. Usually around 190 calories, 26g protein, and 14g fiber when I make them. Around 2g net carbs.
I make waffles with them. They're crispy so be careful when transporting them, but it's an easy whey to get more protein. I like chocolate protein powder + carbquik + coco powder which produces a brownie-esque waffle/pancake.
Carbquik can also be used to make cheesy biscuits or whatever else your heart desires.
I also like string cheese, pepperoni slices, cottage cheese + protein powder (or yogurt), Kroger brand's carbmaster products, and oven roasted veggies.
There are also "parmesan crisps" and "asiago crisps" that are sold at grocery stores that are for salad toppings.. But could easily be a low carb snack. :-) You can prolly make those at home too.

For sure. I think it's all about mindset; keto isn't supposed to be a fad diet you slip in and out of to lose some vanity weight, it's a lifestyle. Finding foods you genuinely enjoy that fit into the diet is absolutely key to sticking with it; afterall who wants to stick with a diet that makes them miserable?

Exactly. I disregard calorie suggestions almost entirely because they are pretty unrealistic for me unless I absolutely gorge myself and feel stuffed around the clock.
Typically speaking I start my day with a boosted coffee (which you can totally do yourself with butter + coconut oil + coco powder I just appreciate the convenience) and then around 1-3pm I have a grass fed beef stick and boiled egg or something roughly equivalent not because I'm super hungry but because I know if I don't eat a bit I'll be extra hungry at dinner and make 2 people's worth of food ;) and then I have plenty of room for whatever the heck I want for supper. I'm similarly recommended to eat ~2.8k calories a day and most days I'm barely half that.
On sundays I make a half batch of carbquik biscuits and have two of them, two eggs and a nice keto sausage gravy which clocks in at ~6 net carbs as my "cheat but not cheating" treat.
But ultimately, mixing it up keeps me loving the food I eat which makes it a breeze to stick with keto for me.

The hardest part of the transition for me was not having access to food staples. It hamstrung my start twice before I found these options. These days I eat mostly Paleo and natural foods, so I eat less of these, but they're amazing stepping stone tools to get you into the diet with low effort.

I generally take shelf stable milk, eggs in a plastic camp egg container that keeps them safe, flour, baking powder, salt, pepper, root vegetables like potatoes, carrots, onions etc. Tinned chilli, tinned tomatoes, dry pasta. Hot sauce. Tea and coffee. Bottled water.
With that, we can do a tonne of stuff and we're always pretty happy.
I use it at least twice a week. For certain recipes it's amazing. I use it for frying exclusively and with a flavored sauce it taste pretty close to flour. They have. Cheese biscuit recipe and a tollhouse chocolate chip cookie that are also my favorites

I did keto for a few years before moving up here and a little bit after (unfortunately, STL's great food scene got the better of me). Trader Joe's was good for some of the staples. I honestly never found anything of value at Aldi's except meat and cheese, which I can just get (better quality) anywhere in STL. Everything else was overprocessed or frozen food shit.
TBH, literally the only thing you'll run into SOME issue with is the flours/powders. If you end up having to find them online, so be it, just buy bulk and don't worry about it. Be sure to get unblanched almond flour AND almond meal, as they're two different things for two different uses. Don't let anyone fool you.

I did end up ordering online a few times but I'd make huge bulk orders of staples. I did most of my keto shopping at Netrition.com, they have a lot of "weird" stuff. I bought some CarbQuick but never ended up using it. Most people would say you're "not supposed to" make foods that are keto versions of baked goods (mostly) because it'll just make you crave the real thing, but who knows. I fell off that ship a long time ago. Now I'm big enough to sink one.

They came out pretty good. Sadly I don't have any low carb syrup but the savoriness from the bacon and sausage patties made it taste great!

Generally, I've found the best crusts have condensed milk powder in them. I'm not sure if the Pillsbury blend has it though.

Also, since you mentioned biscuits, Carbquick makes a good biscuit. Usually add a bit of powdered sweetener, cream, egg, and tsp baking powder to enhance the drop biscuit recipe. Better than a mug bread if you want a biscuit. They freeze well, too.

~1/4 cup heavy cream
~8 tbsp swerve confection sugar
~1 tbsp vanilla extract
~1 tbsp chai mix
I used approx measurements, tasted it as I went until desired sweetness and texture. There is probably a recipe somewhere but I was too lazy.
Using hand mixer, mix butter until velvety, add sugar, vanilla extract. Mix again until incorporated, add heavy cream, mix until thickened and then add chai mix to taste
Toast some shredded coconut on dry non stick pan and sprinkle on top
This stuff is surprisingly good, and is keto-friendly, so I'd imagine it's fine for slo-carb too: carbquik

Peel/devein the shrimp while leaving the tail on
Add salt and pepper to coconut flakes to taste.We used 1tb each but found out it could have used more salt and pepper.
Preheat oil to 375 degrees fahrenheit
Coat shrimp in carbquick, then eggs, then carbquick again
Fry shrimp for 1-1.5 mins depending on size of shrimp
Pull shrimp out and place on some paper towels til the outside feels crispy
Coat shrimp in eggs and then the coconut flakes
Fry for another 2-3 mins, again depending on the size of shrimp
Total was ~8.5 net carbs for the ingredients. We didn't use up all the carbquick and coconut flakes so the actual net carbs are going to be less. Cocktail sauce had way too much sugar so we used Siracha as a replacement (~1g carb/tbs). Enjoy!

I bought the Red Lobster Cheddar Bay Biscuit Mix from the grocery store, and made them. I took my time and was careful. They were perfect. It was like I was there, but I technically didn't have to wear pants to eat them at the same time.
You can find Carbquick on Amazon. Pretty decently priced and there are a couple different sizes available. Haven't tried it yet personally.
I'd agree with other posters that repeat meals make life on keto a lot easier. Here's an example of a day for me:
<-- 11am: Chai tea w/ heavy whipping cream, equal sweetener OR decaf coffee from fresh beans, w/ heavy whipping cream, equal sweetener. (Sub almond milk if calories are a concern)
11am - 2pm: Leftovers OR 1 egg, 4 slices bacon, strawberries. If lifting that day, also 1 isopure protein shake w/ almond milk.
2pm - 5pm: ham, nuts, and mustard, rolled up in a slice of swiss cheese x2 (these little wraps are SO GOOD! I throw in some pickles or cornichones if I've got 'em).
5pm --> ground turkey chili with greek yoghurt or sour cream, thai red curry soup, taco bowls over lettuce, FAT HEAD PIZZA, and now, keto biscuits and gravy are my go to's for easy, quick meals.
Dessert: berries with whipped cream, or low carb ice cream with a dollop of peanut butter.

I aim for dinners that are easy, low clean-up, cheap, and which make enough leftovers for at least two more meals, then I eat those leftovers for lunch as mentioned above. I'm in maintenance currently, but when cutting I eat at 1200kcal, so my meals also need to be lower in calories (hence intermittent fasting).

I 100% recommend checking out Birch Benders Paleo Pancake mix. They definitely have a different taste and texture from wheat pancakes, but they aren't terrible. Hopefully they're something that works for you.
Coconut flour is way different. It needs more liquid, more eggs, and tastes a lot like coconut.

My suggestion was going to be IF with skipping breakfast since you have issues.

You can actually order Red Lobster Cheddar Bay Biscuit mix from Amazon. I'm assuming that it won't be near as warm and soft and flaky as the real thing, but it might be the closest you'll get.
You can make low-carb biscuits with CarbQuik for breakfast foods (I use it for biscuits and gravy).
KNOW Foods makes a bread mix, which is 2-3g net carbs per 1/2" slice. I've used this for sandwiches and just cut the slices really thin (like 1/8"-1/4").
I'll also second the idea of a cabbage leaf - a bit sturdier and more flavorful than something like iceberg lettuce.

Keto is low carb, however you achieve that low carb is up to you. Almond flour and protein powder is for cookie dough, quest bars for if I get hungry during school.

Right, but there is a difference between cauliflower pizza crust and a frankenfood version.
Also, at the end of the day - this way of eating has restrictions. Trying to dance around it by eating starches that just inject fiber into everything to trick your macros might make it difficult to stay in ketosis.
But again, it is a matter of opinion. For example, I adopted the "fuck the foods that made me fat" approach and rejected anything that even resembled a "cheat food." But others like to experiment. If they are able to make cakes, breads, etc while staying in ketosis - more power to them.
