Thanks! A pellet barbecue/smoker has a hopper for wood pellets, typically made of Oak or Alder, with a certain percentage of an aromatic hardwood, such as Mesquite, Apple, Cherry, or Maple. These are fed into the firepit via an auger that is controlled by the thermostat, allowing you to set a temperature for cooking. Real barbecue (low & slow) usually happens around 225-235°F, which allows for longer cooking times in order to break down tough connective tissue in traditional BBQ foods like brisket, or ribs. Crunch chicken skin comes at higher temps, though. The "Chef Merito Carne Asada" seasoning can be found in a lot of supermarkets in my part of California, or almost always in a 'Mexican' market. It's basically Salt, sugar, chile powder, & some citrus. This could be easily approximated with stuff from your spice rack (see if you can find dried Pasilla chile powder if you make your own. The "Chocatal" was discovered at my local supermarket, but it's available online:

So far, I've only been able to find a virgin olive oil based vinagrette. (Which my grocer only had 2 left of the shelf of lol). People says its almost better to make your own my mixing up olive oil with some lemon juice or lime juice.

The one lc1337 used, Wishbone Casesar has Corn Syrup and Soy Bean oil as its 2nd and 3rd ingredients. So that's a no go in my book.

If nothing else, you can still order the ranch on Amazon. The product locator says King Soopers has it in Colorado but I know for a fact they don't.
