Congrats on the weight loss!

If you're going home every weekend by car, there's no reason why you can't do a meal prep like it's discussed in this forum. Just pick some recipes and give it a go! If it's by plane, it's a lot harder--you need leak proof containers and it will likely be more hassle than it's worth. If you aren't going home, it'll make it much harder because the refrigerator in your hotel room likely has limited freezer space (unless you're in a residence inn or similar--and then just do standard meal prep).

Having traveled and stayed in hotels for years, I don't meal prep where I am. Even in a room with a kitchenette, it is VERY difficult cooking on the road as you don't have the cooking devices (stove, grill, etc.), the seasonings, or other items that you typically take for granted (plates, utensils, etc.). I found that per meal, I would end up spending significantly more because I would forget to bring something and would end up buying it, and then I'd have a whole suitcase of stuff that I picked up to bring home (ziplocks, seasonings, cooking utenzils, etc.).

You can travel and not meal prep, yet still eat inexpensively and reasonably healthy. Microwave frozen food has really improved in the last decade, in terms of appetizing and healthy (except for sodium) (it's inexpensive too). You can get steam fresh veggies or similar which are great for the bulk of a meal. At night, I use a rocketgrill or hotplate to cook meat or a prepared noodle dish. For lunches, I've used the frozen microwave dishes, or alternatively, ate a premix bag salad with meat that I've grilled on the rocket grill the night before.

If you think that 12 hour shifts are long, depending on your drive, you likely will still have plenty of time at night to cook for that night and the next day. I personally suggest eating both lunch and dinner at work (cook at work, then you don't have the smell; something like a rocketgrill works great in the coffee area at work), as late eating is known to cause digestion issues such as reflux. The last thing you want to do is eat 1500 calories then go to bed--that's a sure way to wake up in the middle of the night puking from reflux.

I highly recommend getting yourself a George Foreman Grill like this. They are dead simple to use and you can cook pretty much any kind of meat on them. I'm an experienced cook but still use mine nearly everyday. Steaks, burgers, bacon, ground beef, pork chops, chicken, you name it you can cook it on the GF. One of the simplest things I cook are frozen 1/4 burger patties from Costco. I don't even defrost them first, I throw them on frozen and plug the GF in (no need to pre-heat) and in 11 to 12 minutes they are done. For fresh meat I pre-heat the GF until the light goes off and then cook, steaks take about 6 to 7 minutes depending on how done you want them. Trust me, you will love it.

Or the Tassimo...I mean I don't need expensive instant coffee...but instant lattes! INSTANT LATTES!!!

The George Foreman is pretty...not necessary either...I mean we do have a stove and a small toastie maker...but omg I loved my mum and dad's Georgie (as we call it!)!

Though if I was going to spoil myself, I'd probably just buy loads of books and art supplies and whisky xD

Me and my roomie had this last year and we used it to make amazing grilled cheese and ham sandwiches all weekend. It was super fast and very satisfying when we didn't feel like spending money on food or wandering our hungover asses out of our hotel room. Also great for late night when you don't want to pay for the ridiculously over priced pizza :P

I actually have a method for doing the entire thing on the sandwich press (some of those in the last gallery, though I can't remember which).

Steps:

  • turn on sandwich press, when I say sandwich press I mean a huge square flat thing with grills, call it whatever you want, I call it a sandwich press, buy it and turn it on
  • lay two strips of bacon on it, cook, don't be scared.
  • lay your hashbrown in it, cook
  • move your bacon horizontal and stake one on top of the other with inner bend facing up the slope and lay sliced mushrooms along the bend
  • DONT BE SCARED
  • crack an egg in above the barrier you have just created
  • shut the lid with the prop up so the lid is ever so slightly touching the top of the egg
  • leave it and DO NOT BE SCARED
  • put your plate and wrap at the bottom of the grill and use the back of a knife to just slide the whole thing off and onto the wrap
  • wrap it and put it back on the grill to sear it shut

    I have a video of it somewhere if that doesn't make sense.

    It makes a very grease free wrap.

We have a portable butane stove we can put on the dinner table like this. (This is also really handy for picnics and cookouts...or if you like hot pot, or shabu shabu, or fondue...very handy to have around)

And then we have something like this or this to put on the stove. Personally, I'd go to a korean grocery, as they'll probably sell something like this at a cheaper price.

You probably can get away with using a small pan too.

I wouldn't buy bottled marinade. The sauce is really easy to make, and there are plenty of recipes online.

Edit: note also that if you're planning on doing this inside there's going to be a bit of smoke. You may have to open windows! The 'smokeless' pan above isn't as smokeless as one would like.

It will fit up to a 15 lb turkey. It looks like the smaller one that I recommended (the 5250 series) still accommodates a bird this size. There are several other brands I checked out that only will rotisserie a 5 lb or less chicken but I opted for a larger one because I would rather prepare more for the week. You can opt to cook one chicken vs 2 chickens or a turkey- you can always scale down your meals/cooking. The problem with the smaller one is that you can't scale up all. I kind of thought the Ronco one I got was kind of silly because of the informercials but it is actually really great and it had the best reviews online.

If I was you and you had another $150 bucks I would get the Basecamp, Camping for a few months, might be really nice having the ability to use a greater variety of wood sizes and increased cooking surface. Also if you are heating water and such, the biolite is nice if you are on the move maybe, but if you are setting up a base camp the basecamp might be a nice addition. Do you have running water, electricity or are you setting up a Yurt or something on your land?

Hey, we have done extensive research into some natural non medical remedies for IBS. For more comfort when using the rest room you should check out the squatting toilet stool. I have owned this Hamilton Beach grill for about 5 years and use it about 5 times a week. It does a good job on meat and fish, I do not grill veggies that often.

They are cheaper than Foreman grills and I like how they work, and the floating hinge. The only negative is the slight oil spray when cooking fatty meats and burgers. I keep mine on a tray on my counter and it makes clean-up pretty easily.
