I was the exact same as you - I could have lived on cheese alone but I've been (mostly) dairy free for over four years. My daughter was having a bad reaction to nursing and my dr suggested I cut out dairy and it was a miracle for her and me honestly. I'd always been gassy but just chalked it up to "I guess I'm just gassy" but the change was dramatic and I'm never going back. I can recommend substituting Earth Balance for butter, and I typically use avocado to replace the "creaminess" of cheese on a sandwich. And for homemade pizzas or melts I can recommend Daiya (but NEVER eat it cold. So gross.)

I asked the same question a while back. Was out for about a month with no access to refrigeration. I survived, and lost a bunch of weight, good times.
One person had recommended using more MCT oil to meet your caloric intake. I did a couple times, but it can be pretty rough on your digestive tract, so unless you build a tolerance plan on going to the bathroom frequently.
I ended up using a powdered [heavy cream.] (https://www.amazon.com/gp/product/B00OCV3QRW/ref=oh_aui_detailpage_o09_s00?ie=UTF8&psc=1) Worked great, just took a little more prep time. I just mixed the powder with water, added the MCT oil and the ketochow.
Chris pointed out previously that once mixed you should treat it like milk and keep it refrigerated. I simply drank it on the spot, actually wasn't bad at all and kept my energy levels up.
For in between snacks I just carried some meat sticks and nuts. Worked out fine and I didn't have to break keto. Hope that helps!

Some stuff it just makes sense to try and get in bulk, because you get so, so, so much more.
Also, re milk. You don't have to get powdered milk. You also have the option to get UHT milk. UHT milk is milk that's been cooked at a high enough temperature that it becomes shelf stable. Just search for UHT milk and you'll find a tonne of brands and choices. Different fat percentages, sizes and so on. You can get a large carton, or they also make packs with a bunch of small cartons, like this one: http://www.amazon.com/dp/B002FX2IOQ/. I prefer that, because I don't use milk very often, so opening a small container each time works perfectly for me. You do however, have to stick the container in the fridge once you've opened it.
Also, if you have a tea strainer (or even if you don't, they're only a few bucks and worth it!), try and get loose leaf tea. You can get a lb of tea for around 10 bucks easy, and you can easily make a few hundred cups of tea. To make strong black tea, I use 4 grams of tea for every pot, and each pot gets me about 4 cups. A lb of tea is 453g, so...that works out really well. Even if you make individual cups instead of pots and use a couple grams per cup, you can easily get 200 cups out of a lb box. There's just no beating that with bags, even if you resuse them.

Thanks OP! I'd already created list and was about to post to food_pantry when I saw your post and you'd found cheaper options for a few things and that seriously rocks.
I have a stupid simple but really popular soup: 1 part winter squash puree, 2 parts coconut milk with 1-2 T Mae Ploy red curry paste per cup of orange veg puree soup. I like Chaokoh coconut milk, because I can get a return of the oil split when I fry the paste, which is visually pleasing. If I am making enough quantity, I like to use a variety of orange veg/squash, freshly roasted, because that yields the most complex and interesting flavor. With light curry seasoning, it is a real hit for funeral meals or meals for shut ins.
That said, I am interested in tips for cleanly splitting winter squashes for roasting to make the puree. The things are roll-y and tough, no matter how sharp my blacksmith grandson makes my cleaver! My father, God rest his soul, made a starting cut in a vise with a circular saw and I do the same thing if I am quantity cooking them, but there has to be a better kitchen safe answer if I am just feeding a few folks. Helpful thoughts?
I learned how to cook Thai curry from a Thai friend, and I realized it's the brand/quality of ingredients that's really important. This is the brand of curry paste he used, and this is the brand of coconut milk. Both of these were significantly cheaper at the local asian market. I also got a good quality fish sauce, and these lime leaves that I added in with the coconut milk. It's honestly better than anything I can get in restaurants around me. My half-Thai brother-in-law said it was better than his dad's curry. And it's super easy.

Now I've lived in many countries with eggs both ways, and they taste pretty much the same to me. it is seasoning on eggs that matter more IMHO (black pepper being key cultural distinction in my view, like black pepper on cottage cheese, corn on the cob, or fresh sliced tomatoes). With the milk, the 'cooked' UHT tastes very different. And in USA, like France, there can even be a raw-milk craze.
Raw milk in USA I've encountered personally is extremely rare. I expect it's mostly something people try who live on a farm or very close personal friends to a farm. Or, well, I'ts American prudish to favor violence instead of sex, some adult males with pregnant or nursing wives have probably accidentally had 'raw milk' as part of foreplay ;)
Which raises another point: But that really is taboo to speak in USA. For a while (~ 1975-2005), people seemed to consider formula superior perhaps because it had added vitamins - like enriched or fortified white bread. (For infants) Breast milk, not formula, has made a return among the educated. Who knows, the poor and unemployed may have been using it all along due to convenience.
If you have a Trader Joe's nearby their marshmallows are vegan (they are rebranded Dandies, I believe). Their Sipping Chocolate was also dairy free, but I think it's discontinued. :(

Mocha Hot Cocoa Mix: add 1-2 tablespoons instant espresso powder to mix
Peppermint Hot Cocoa Mix: add 3 tablespoons well crushed candy cane or peppermint hard candies to mix
Pumpkin Spice Hot Cocoa Mix: add 2 teaspoons pumpkin spice to mix (or 1 teaspoon cinnamon, 1/4 teaspoon each ginger, nutmeg, cloves, allspice)

Granted, I have absolutely no idea how this tastes, but the Amazon reviews seem good. It claims to make 8 quarts (not sure if that is supposed to be per container or not).
The reason I think this might be a viable option for you is that it may deal with some of the apprehensions your family might have towards soy milk. For one thing, it's cheaper than regular milk, as far I as can tell. Also, it won't spoil if not quickly consumed, so the worry of paying for something that will spoil if not used quickly won't be a problem.
In addition, you can flavor it to your liking- sweeter, less sweet, etc., which could be a help when using it to cook.

Who ever hears of chocolate milk or OJ bottles that split, or have mold under the cap? And there's a gazillion times as many of those bottles moving around the country.
One difference is, the shipping channels are different. Nesquick etc. go in large quantities, whole pallets probably, in big trucks to grocery wholesalers' warehouses. From there they go in wholesalers' trucks to grocery stores, handled by drivers who deliver only groceries.
Just the same, somehow I think Nesquick or Tropicana and other big liquid-food-makers have a better grasp of this. It would be fascinating to hear from somebody who actually knows food packaging and shipping.
This is also worth buying at this price. I get them at $1.40/can at my Thai grocer. This + Chaokoh makes a super simply and amazing curry. Same with the Indian pastes. The coconut milk is more expensive on amazon than Patels, so that may be worth an order along with the ghee.
Edit: "this" was a 6pack on amazon of Maesri thai curry pastes. Id really look into them and the coconut milk from Patel brothers.
Try shelf stable milk cartons, like those milk boxes from Organic Valley. I don't care that it's organic, but each box is like 3/4 cup, which tends to be how much milk I need at a time, and it's good for MONTHS, with no refrigeration. I bought these, and they've been great for baking and cooking.

I don't eat eggs for ethical reasons, and just recently ordered some of Follow Your Heat's VeganEgg
It comes out to be 40 calories per "egg", and it scrambles up like chicken eggs. It actually smelt so much like eggs while I was mixing it that I felt off put. I figured maybe someome around here who is cutting calories would be interested in still being able to enjoy their scrambles in the morning.

I don't believe it's possible with soylent aseptic process. The bottles are multi-layer with oxygen barrier. Jasper products (Soylent's contract manufacturer). If Soylent went with the "Snowman" bottle it might fair better. Ribs help resist denting in thin bottles like this. /u/fernly's Nesquick example uses a ribbed bottle for this reason.

A lot of cheap sandwich bread at the grocery store is vegan. The $1 buns where I shop don't have any animal products. Those are certainly not "fake."
Baking vegan is easy - just use a plant-based milk (soy, almond, etc.) and egg substitute (flax/chia seeds, aquafaba, VeganEgg, etc.)
The dairy industry is probably the cruelest of all. There's no getting around that. Cow milk is for baby cows.
"Free-range eggs" is a selling point that means almost nothing (basically the chickens have access to a small door leading to a small outdoor area where they could theoretically go).
I used to hold your views until I started watching a lot of YouTube videos and documentaries. Earthlings and Speciesism: The Movie are a couple good ones. The truths behind these industries are painful to learn, but necessary to be aware of IMO. It's good that you're aware of the sustainability issue. Cowspiracy is a good documentary about this (on Netflix).
Personally, I wouldn't eat meat from a lab because I haven't eaten it in years and it would just be gross to me. I don't need it.
In addition to some of the other suggestions, I think many restaurants use quite a bit of palm sugar in their curries. In fact, a lot of Thai cuisine uses a lot of palm sugar.
Get coconut milk from cartons, not cans.

OP- So currently I follow a low-carb, high fat diet. I think it's actually very well suited for the trail, as fat is calorie dense (less weight/space), and may require less prep. Also hiking hard you will be burning a lot of fat anyway, so you may suffer less dramatic blood sugar swings if your diet reinforces rather than countervails this trend.
At home I eat salads+avocado, sometimes olives, always cheese, olive oil, vinegar, plus cold cuts or roast chicken slices for lunch and dinner, and generally some Belgiosio mozzarella snack cheese plus an apple for breakfast, and some fruit as dessert after dinner. For a hot drink, I like to use unsweetened cocoa powder- a couple to 3 tbs of Equal Exchange baking cocoa, plus some Belgian cocoa for some extra kick (Belgian cocoa is more acidic/bitter). I mix in 2 tbs of heavy cream. This is relatively high fiber, low carb, high in nutrients. Also coffee.
Since I go nearly stoveless at home, here's what I've come up with for a meal replacement on the trail: a shake made from:
Vegetarian trail protein shake:
Vitamins and minerals base
Fats/fiber: Powdered avocado
Fats/taste: Powdered heavy cream
Protein/other nutrients:
Powdered Spirulina
Protein/fiber/other nutrients
Powdered Chlorella
Taste/some carbs/fiber:
Cocoa (2/3 Baking, 1/3 Belgian)
Note that this is only what I've planned, although I've made pretty tasty shakes before using whey protein, avocado, cocoa, and strawberries.
For solid food, I plan on bringing dried apples, freeze-dried strawberries, cheese, Wild Zora's meat/veggie bars (excellent, especially the lamb), Chudabeef beef jerk (best beef jerky- low sugar, tasty, though go easy on beef jerky in general), and nuts. Also the aforementioned cocoa and Starbucks Via.
I also plan on bringing some Better than Bouillon and freeze-dried veggies, and some amount of freeze-dried meat to make either a hot broth or soup. Combined with the cocoa/coffee, this will be the only use of a stove I will have.
I will also be bringing some pemmican in case I find I haven't brought enough food otherwise, since it's probably literally the most calories per weight you can carry.
Hopefully this gives you some ideas!
Edit: Also I think that any or all of vitamins, minerals (especially electrolytes), protein, and fats could be what you need more of on the trail.

Oops,that should have said coconut MILK powder, not powdered coconut. This is a brand Ive used and liked: https://www.amazon.com/Native-Forest-Coconut-Powder-Ounce/dp/B00QIVB19Y. However I don't use it often so there might be tastier brands. And weirdly the coconut powder works better in coffee than coconut milk does. Creamier, less oily, etc.
I DONT recommend nut milks or their powders. Almond in coffer is gross. But you can try that too - some people like the taste and dislike coconut.
It's just your old non-vegan orders (like Tuscan Whole Milk) clearing out of the delivery system. Once all of your previous omnivorous Amazon orders are cleared, your deliveries should become more regular.

You want Chaokoh coconut milk, IMO it’s the most thick, flavorful, luxurious.
Don’t boil it too quickly or too much because the texture can get a little funky.
