DOPNYC's Guide to Proofing Containers

For The Beginner

As a beginning pizzamaker, being able to see the underside of the dough is invaluable.

Posting photos of the underside of the dough hasn't become much of a trend here on Reddit, but I'm hoping that it will become more common, because it's a great way for beginners to troubleshoot balling and proofing issues.

Before we jump into my recommendations, let me share some traits of a good proofing container

  1. Wide- the wider the better, because the wider your container, the less contact the dough will have the sides, which will give you a prettier rim/less pitting. Those quart soup containers that you get from the restaurants? No.
  2. Shallow-ish. As you get into pizza, you're going to want to entertain, that means multiple dough balls, and, if you're going to fit them in the fridge, you want to be able to stack them. 2.5 inches is typically tall enough, although if your container is especially wide, you might be able to go smaller than that.
  3. Round. Square containers make square doughs, and, when you go and stretch them, they fight to form square pizzas. The only exception to this would be a square or rectangular container that's wide enough so that the dough never touches- it would have to be very wide, though.
  4. Clear. Obviously.
  5. Smooth- any kind of ridge on the bottom or the side of the container will have a tendency to grip the dough and make the container harder to wash. A little bump is not the end of the world.
  6. Almost air tight. Dough releases a miniscule quantity of gas as it ferments. If your container is air tight, eventually the pressure will build, the lid will pop, and your dough will dry out. Dried out dough is very bad and will split when you go and stretch it.
  7. Plastic. Plastic is a little better than glass, since, assuming it's lightweight, it will allow the dough to be more responsive to temperature changes- changes going into the fridge and coming out.
    With this in mind, here are some clear, and some clear-ish options.

    A wide glass bowl with plastic wrap

    As long as the bowl is clear, and has the right proportions, this may be the least expensive option of all, because you might already have a glass bowl lying around. The plastic wrap is not ideal, though, because, as I mentioned before, your container can't be airtight, so you don't want the wrap to pop from the pressure. The normal procedure for plastic containers is to take a pin and prick an extremely small hole in the top. This isn't as easy to do with plastic wrap, as the hole in the wrap tends to want to open further as the wrap is stretched.

    The bottom on these is textured, but you should still be able to see what's going on with your dough. The big downside to these is the size. If you're making about a 12" pizza or less, great, if not, I'd go with something else.

    Still a little small- maybe good for up to 15" pies, but no bigger. Glass is not ideal, but, if worse comes to worse, you can just leave your dough out longer to warm up.

    Way too tall, but readily available an not that expensive. The bottoms have a similar cloudiness to the Glad containers above. Not ideal, but should still allow you to see what's going on.

    Remember what I said about rectangular containers being okay as long as they are wide enough? These are 16.6 x 11.3 x 3.5 inches. 11.3 should be sufficient for up to about 15", but larger dough balls might start creeping up the sides.

    At a little less than 12" wide and 2.75" high, and a perfectly clear and almost perfectly smooth base, this could be, imo, the rolls royce of beginning proofing containers. But it's also a whopping 22 bucks. If you go this route, you might get only one, and then go cheaper with the other ones.

    Look Around for Something Else

    I've devoted maybe four hours, total, looking for proofing containers online and in stores. There's obviously more out there. I've given you the specs to look for. As you go into your supermarkets or dollar stores, take a look at their disposable plastic containers and see if anything fits the bill.

    For the Intermediate and Advanced Pizzamaker

    Okay, you've made enough pizza to no longer need to examine the bottom of your proofing/proofed dough and it's now time to take the training wheels off. Here are those options.

    These are what I presently use. I was able to find them locally at a distributor. They work very well. If they could make a clear plastic version of these, and maybe make them 20% larger (17" doughs are a tight fit), then they'd be, imo, the perfect proofing pan for everyone- beginners to advanced.

    These are the industry standard dough proofing box. When you get this large, there's are logistics you have to consider due to the size involved. You can't, say, take 8 boxes, stack them, and put them in the fridge, because they will insulate the other boxes and take a long time to chill. Pizzerias will fill these with dough balls, cross stack them so that the dough is exposed, and then place them in the walk in until they are chilled.

    These come in different gauges and can vary in quality from brand to brand. Check the reviews to make sure you're getting a quality box that will last you a long time. NEVER use a metal utensil for removing your dough, as the metal will scratch the plastic.

    I measured one brand of these in person, and it came to 27.5". My refrigerator opening is 27" wide. If you go this route, make sure you have a refrigerator that can accommodate them.

    Remember what I said about square proofing containers? Well, these are obviously very large, but you should be careful about having your dough balls touching, since encroaching balls will create a square edge. For Neapolitan, this is pretty common, but, for NY, you want to try and keep the dough ball round. This will limit the number of dough balls you can fit in these, but, you can still use these for NY.

    These are the smaller version of the tray above. If you're doing Neapolitan, and are comfortable with square-ish pizza, then these might hold more than a couple dough balls, but, for NY, with that 11" width, I'd only use them for one ball. Considering the price, that, imo, rules them out.

    In NY, these are pretty much standard. These will stack nicely with the plastic ones above, and they're a little bit deeper than the plastic ones, allowing for slightly bigger dough balls- such as 18" skins. I've not seen this tested, but longer fermentation generates acid in dough, which may react with the aluminum, so, for this reason, I tend to gravitate towards plastic. But this is probably a little overly paranoid, so if you feel comfortable using these for multi-day ferments, go for it.

    This is super advanced pizza making. Wood proofing boxes (or wood liners for plastic boxes). The wood will naturally draw moisture from the surface of the bottom of the dough giving you a crispier crust. If you're running a professional operation, expect the health inspector to have a fit. The two links that I've provided are both dated and may provide inaccurate info. If you go this route, do a LOT more homework- AND report back here! :D

    A final note... These containers are constantly changing. The disposable containers are always being redesigned- usually for the worse, and the companies offering these types of containers rise and fall. 15 years ago, the plastic dough proofing pans that I use didn't exist. TL;DR - Standard answer, the Glencairn glass (the official {Scotch} Whisk(e)y glass). My current favorite though is the Taylor'd Milestones Reserve Whiskey and Scotch Glasses available HERE

I'm by no means an expert, but I have tried many different shapes of glassware over the years... So, here are some of my experiences.

The standard highball/lowball, with their straight 🥃 (or even at times obtuse _/ ) sides, allows for too much area for many of the aromatics in the whisky to disperse and even escape, making the whisky very bland and uninteresting, thereby "weakening" or "taming" it a bit. Hence, this is where most people start.

Something with a bit of a bowl or tulip (_) to it is kind of the next step up. This helps to concentrate the aromas and can help to bring out some of the subtleties of a good whisky.

Then there is the Glencairn style glasses, which kind of combine the previous two. It is a slightly bowled base with the straightened tip of a lowball. This is the official Scotch Whisky glass, and does a really great job at really getting you intimately close with your whisky, bringing out even the slightest nuances. However, to me, this can be a bit much for whisky that is a little heavy on the nose.

So, the 3 different glasses that I have tried that use a very similar shape to the Glencairn, but widen the rim up a bit, thereby taming the nose ever so slightly, are the Canadian Glencairn, the Norlan, and the Taylor'd Milestones Reserve Whiskey and Scotch Glasses.

The Canadian Glencairn is a great glass but there are two things that bug me a bit about it. First off, it is slightly awkward to drink out of, as you nearly have to put the glass vertical before anything comes out. The second, much more minor issue, is that your hand is right on your whisky only separated by a very thin layer of glass, which will lead to warming up your whisky. Which you may or may not enjoy.

Then came the Norlan glass. It is essentially a Glencairn glass with some aerators in the bowl housed in a double walled tulip shaped glass, that way your hand will not warm up your whisky with a lingering enjoyment of a good dram. However, again, to me, it is just slightly awkward to sip from.

Enter the Taylor'd Milestones Reserve Whiskey and Scotch Glasses. And mentioned above, this is currently my favorite glass to enjoy a nice dram in. It is essentially a Glencairn this has an opening that is about 1.5 times the diameter (which can tame a slightly heavy nosing whisky just the right amount), and then a nice lowball type weight at the bottom of it. So, it feels great in the hand, and you don't have to have your hand right on the whisky if you don't want to. It also feels much more natural to sip from.

I don't have experience with any of the Trader Sam's Mai Tais but the original 1944 Trader Vic's recipe is detailed in one of my earlier posts.

The consensus seems to be to use Small Hand Foods orgeat if you can get your hands on it and Pierre Ferrand Dry Curacao. I used what I had on hand when I made it in the post above. For the rum, Denizen's Merchant Reserve 8 Year was formulated especially for the Mai Tai, being a blend of Jamaican and Agricole rum. You can also do a 50/50 split between an Agricole Vieux and an aged Jamaican rum. I have Clement VSOP on hand for my Agricole Vieux which is a good option but others can chime in with their favorites. The world of aged Jamaican rums is vast and it's fun to substitute different ones in the Mai Tai and see how it changes. Appleton Reserve might be a good rum to start with as the Jamaican component and you can experiment from there.

For juices, always used fresh squeezed and preferably juice within a few hours of using them.

For crushed ice, you can take a lewis bag and ice mallet and smash ice cubes (while releasing some stress). If you don't want to buy those, feel free to use a rolled up clean dish towel and a rolling pin or something like that.

For bigger parties, I know people recommend the ice from Sonic Drive-In or Chick-fil-A. They'll both sell you a bag for cheap.

I've been looking to get a hand crank ice crusher but haven't yet. I've seen this one recommended a lot as well as some of the vintage ones on eBay like the Oster Snowflake.

I just started making it myself. I got a SCOBY from Amazon and here's my general recipe:

  1. 1 Gallon brewed tea (black is the easiest/cheapest to use, but I've used Roobios too)
  2. 1 Cup sugar (I used refined white sugar - while technically not Paleo, it is the easiest for the SCOBY to digest)
  3. 1 SCOBY
  4. 1 Cup distilled white vinegar/previously brewed tea

    Boil the water. Once the water is boiling, add in the sugar and stir until dissolved. Add the tea bags (I usually use 12 tea bags/Gallon) and brew to desired strength. I like mine strong, so I leave the tea bags in the pot until the tea is to room temperature. You can put it in the refrigerator if you want to cool it off quicker. This is very important since hot tea will kill your SCOBY.



    Sterilize your brew container by swishing some vinegar around or running it through the dishwasher on the hot cycle. I bought one of these to use as my brew container since it makes bottling into these bad boys easier. This is also very important since you don't want any "bad" bacteria to get into your controlled fermentation environment. Pour the tea into your brew container, add the vinegar/starter liquid, and add the SCOBY. From this point on, do not let the kombucha touch anything metal or any non-sterilized equipment. Cover your brew vessel with a clean dish cloth/coffee filter/paper towels and let sit 7-10 days, depending on how vinegar-y you like it.



    That's pretty much it. Just make sure everything is clean and sterile when handling the SCOBY and you will be fine. There are a bunch of recipes and how-to's out there as well, I've just summed them up in this post. Happy Brewing!

That's awesome he wants to learn more! Hope you also get to enjoy that exploration with him.

My first idea is usually to look around what you have locally, whether specialized tea shop(s) or more commercial tea selection at coffee places. Starting where you are can connect you with the people also interested and supports businesses around you.

Next my question might be whether "black-based" means flavoured or not. The highest-end black teas I have are single-origin and I usually brew them in greater tea (g) per water (ml) ratios, keeping the leaves in the water for short periods (10-20 seconds, increasing after the 3-4th time usually), usually referred to as "gong-fu" style. If flavoured, I would usually more go for "western" brewing (less leaf-to-water ratio and longer steeping time) and you could search for "glass teapot" in Amazon or elsewhere.

Not even a mention of the TeKu? The glass was invented to practically replace the standard pint. I feel this list is good, but could use some help.

About the TeKu:

I have made a few sodas so far. Most commonly, (and my personal favorite,) I make a ginger beer. If you have a juicer, that's the way to go to make good home-crafted sodas. You can create all kinds of flavors with just the juice of fruits and vegetables, then sweeten with simple syrups, add water and carbonate. Keep in mind that using fresh juices puts a certain shelf life on your drinks. (Still working on how to preserve one's sodas for bottling, etc.)

I personally use a soda siphon for carbonation (http://www.amazon.com/gp/aw/d/B00007JXR7). This has its perks and downfalls. On the one hand, forced carbonation produces zero alcohol content (which is why I go with that,) and forgoes the possibility of accidentally blowing up your bottles of soda due to over-fermentation (I've actually seen this happen.)On the other hand, it fizzes out and goes flat faster and more easily than fermenting. This has been an issue when I've tried to make a bottle of carbonated ginger beer (or any other soda I've made) and then attempted to drink from the bottle. By the time you're doing so, there isn't much carbonation left.

My next venture is Sarsaparilla, or maybe an actual root beer. Either way, creating and perfecting your recipes is fun and delicious. I really enjoy it as a casual hobby. Good luck in your attempts!

I use the 5 gal version now, but I think the 10 Gal would be perfect for both methods because you get a healthy grain bed for filtering when brewing big or small.

You will want to install a Weldless ball valve with a Nipple on the inside of the mash tun.

You will also want one of these false bottoms and a piece of silicon pipe to join it to the internal ball valve nipple

Mash tun cooler (this is probably cheaper at your local hardware store or wal mart) Also, this isn't the only cooler that works. Pretty much any plastic cooler works. But you'll need a different false bottom if you use a chest cooler, which may allow you to mash bigger batches.

Weldless Ball Valve Just take the plastic valve off the cooler and screw this one on. Will work on most any cooler you choose.

False bottom Put this at the bottom, connecting the silicon hose to the ball valve and the top of the false bottom.

3/8" barb You'll need to screw this onto the ball valve on the inside of the mash tun to connect the silicon hose to.

Honestly, if you've already got a kettle that can boil 6 gallons, you're good to go there, and just add this to the mix. Otherwise, pick up a Stainless Steel Brew Kettle.

This whole setup comes in just under $200 but you'll need some hoses and some hose clamps as well. But I'm sure that if you shop around (even on amazon) you might find better deals than I linked. But that's the gist of it. And there's no need to stick with the specific brands I linked. But just make sure to stick with stainless steel for the kettle, ball valve, and connecting accessories and food-grade plastic for the cooler. And any hoses need to be high temp hoses. Silicon is ideal.

This is by no means the "only" way to do it, but a great start down the road. You may also choose to use a pump. It has advantages and disadvantages. You can make great beer with and without one.

    This is the best $60 I ever spent. These are my favorite teas I can recommend:

  • Ahmad Barooti Assam - for the mornings
  • Rooibos - A root tea popular in Africa, also called "bush tea" for the afternoons

    Boil water, steep and drink! I usually load up on the tea and steep for about 5 minutes because I like my tea strong. The Nissan Thermos is the best insulated mug I've ever owned. It has kept my tea hot for about 4 hours with the lid on. Absolutely amazing.

I CAN BE SO USEFUL TODAY!!!

The Libre Tea Mug has the exact same design as the mug you describe, but has glass on the inside, and plastic on the outside. Here's a video. There's a 10 oz version and a 14 oz version, and a 9.5 oz handled version.

However, I bought one of these and decided it's not the best thing in the universe. There were plenty of good things about it, but it had some flaws:

  1. It won't keep drinks hot for very long, because plastic & glass apparently don't keep things as warm as stainless steel (not sure if this is totally accurate), but you also have to remove the lid every time you drink, and it's all the way open, as opposed to a sippy lid or other designs that have small holes or whatever, and lots of heat escapes. It also means that you get a face full of steam every time you try to drink.

  2. When brewing black tea, you stick the leaves in between the two top lids (see video) and brew upside down. However, when you turn it upside down, the surface tension of the water actually retains the ENTIRE volume of water that was in the lid. Seriously. I don't know what the deal is. This happens even with zero tea leaves. This means that when you remove the two lids to drink (you need to remove both lids simultaneously if it's black tea, since the leaves are between the two lids), there's still lots of boiling hot water in the lid, and if you tap it, or bump it, or angle it, all that water falls out. You really have to tap the lid to dump this excess water before you drink; if you don't, you run the risk of spilling lots of hot water all over yourself. Someday you'll forget, and probably burn yourself.

    Aesthetic problems:

  3. You can hear the plastic creaking against the glass, and it makes it seem cheap. Purely psychological, but it probably could be fixed.

  4. The larger size and the handled mug version have the company's website printed address on the side of the lid. Pretty ugly in my opinion.

  5. The lid has a picture, but it's a physical object (a tiny carving or something) and it actually moves. It's somehow not secured in place, and it moves off center and looks awkward and cheap. Plus, I can see a couple parts of it bent the wrong way.

    I can't really recommend it, but if you've used the Activitea and found it usable, you might be happy with the Libre. The design looks pretty much the same from the photos, as far as I can tell. But I have continued searching for the perfect tea mug.

    Contenders thus far:

  6. JoeMoXL: Entirely stainless steel, with a removable infuser basket, a push-button seal, 360 degree drinking, sipping that doesn't require removing the entire lid and draining heat away, leak proof, etc etc. Good stuff.

  7. Timolino infuser mug: Theoretically similar to the JoeMoXL, but no push-button seal, and the infuser basket has some plastic. Oh well though. Adds a hidden compartment in the very top lid where you can store sugar. Smaller than most travel mugs (12 oz instead of the usual 16), so I think it's more practical to fill up, drink, then fill again and get a 2nd steeping out of the tea, as opposed to 16 oz over the course of the day and then getting home or whatever and not making use of the leaves until the next day maybe. There's also a carabiner version. Note that Timolino makes 2 tea mugs; this one, plus another that is ONLY good for green tea, with the leaves steeping inside the main chamber, with no removable infuser basket.

    I've been shopping around for quite some time. These are the two winners as far as I am concerned, though they skip out on being see-through and hiding the tea in the lid, but I can't see any well-designed options out there with those traits (although this Thermos mug has the infuser in the lid, but I wasn't so excited about it), so I'm giving my seal of approval to these. There are other contenders I think, but these are equal or better compared to anything I can find. I might also just go with a Contigo and brew in a teapot and just deal with the fact that the mug has no internal tea infuser.

List of Basic Kitchen Equipment

  • I'm really happy with this set of Ikea pots and pans (they're oven-safe, work on my induction stove, and are ridiculously good quality for the price. they've held up admirably to 2 years of abuse, and the non-stick skillet is still looking good:)
  • I added a big stockpot, which serves double-duty as an extra, extra large mixing bowl. also, the lid fits the non-stick frying pan so I can steam spinach :)
  • 2 non-stick baking sheets/cookie trays (oven bacon FTW!)
  • 2 silpat baking sheet liners (essential for keto pizza crust recipes)
  • 2 wire cooling/baking racks that fit inside your cookie trays; use in the oven to keep steak above the drippings and on the counter to cool baked goods
  • 24 silicone muffin cups (just throw them on a cookie sheet and you don't need muffin tins anymore. you can hold each one over the bowl as you ladle stuff into it, so you won't have nearly as many drips. food doesn't stick and they nest to store in a much smaller space than a muffin tin)
  • a set of mixing bowls
  • a couple of casserole dishes/pyrex baking dishes
  • some basic cooking utensils
  • a good whisk for stirring sauces etc
  • tongs (you need to decide whether you prefer the scissors style or the pincer style...)
  • kitchen shears
  • we really love these microwave cups (I just bought more yesterday cause we use them all the time)
  • little pyrex prep bowls (I never had bowls this size and thought they were dumb but they came with a set; turns out I use them constantly. the fact that they're oven-safe just adds to their utility)
  • electric kettle (super fast hot water for bouillon in the morning and a hot water bottle on cold nights)
  • crockpot with a timer (I've got pork shoulder cooking right now!)
  • electric mixer (whipping heavy cream by hand is pretty torturous! and trying to whip egg whites by hand is nearly impossible)
  • blender (I pretty much only use mine for cream of mushroom soup anymore, but it's essential for that recipe)

If you have a kettle and want an easy to manage work teacup, I'd check out this or this. The Kati's infuser is really easy to clean if you have a small trashcan nearby (just put a grocery bag inside) and although they're a bit pricy, you'll save money by being able to use loose-leaf tea. The Forlife is a bit harder to clean but is still doable.

However if that still doesn't work, Twinnings has a good range of flavored black teas. I also would check out Harney and Sons. A little bit more pricy, but totally worth it. I've had Paris, Florence and a red raspberry tea and all three have been nice.

I bought a pound of this about six weeks ago. There's nothing wrong with it, but I hugely overestimated how much of it I could drink. On the upside, it makes great iced tea, and is wonderful carbonated.

At the end of the day, I like a lot more variety. The additional cost of buying 100g at a time is worth it.

Most people here refer to resteeping in the same tea session with gongfu brewing which uses a lot of leaf to a low water ratio, gongfu sessions can go anywhere from 8 to 15+ steeps. You can keep leaves to resteep throughout the day with larger teapots though, just remove the infuser and let the leaves air dry. If you're leaving it for the next day, I think some people have some success with refrigerating, I personally just leave it out which is fine as long as it doesn't grow mold. You could also try cold steeping your leftover tea leaves overnight, it's a great way to use up the leaves.

Honestly though, with a teapot that large, unless you're brewing for multiple people, a mug+basket infuser combo might be a better choice for drinking solo. You won't waste as much leaf and you can resteep 2 or 3 times without abusing your bladder :)

I picked up some 18oz/532mL glass bottles today. They're very similar to the Epica bottles /u/muxon uses.

Some thoughts so far:

  • The screw-on caps seem to work well.
  • The glass isn't perfect, but they feel solid.
  • The bottles are each the perfect size for a 500cal serving of Soylent 1.5.
  • /u/thapol has a good tip for an effective bottle brush.

    Here's a bottle I filled for tomorrow.

    I used a blender to prep 72oz/2.1L then split into 4 bottles. This works fairly well, but it's easy to lose a little even when using a funnel. Ten cuidado.

You don't need much in terms of apparatus. Personally, I would begin with the following. Keep in mind I am only talking about loose leaf tea.

  • Something like this to which you add loose leaf tea, water, let it steep, and then push the button down to decant
  • A digital scale to accurately measure the quantity of dry leaf. Something simple like this will suffice
  • If you're going to experiment with a variety of tea types (black, green, white, oolong, etc.), I would highly recommend a variable temp kettle. Or at the very least, an immersion thermometer. This will help you accurately measure the temp of water. I have this one

    The above combined will set you back <$60. Honestly, you can substitute the Kamjove tea maker with a simple all purpose teapot, eyeball the dry leaf instead of weighing it, and guess the temp of water and do without the variable temp kettle - I personally wouldn't do it for a variety of reasons, but if you're on a budget...

    The next step, and the most important one, would be to get your hands on samples of tea. A lot of vendors, incl myself, offer samples. Get small quantities from a variety of vendors so that you have enough tea to experiment with, but not so much that you're stuck with a large quantity of tea you don't like. Once you have sampled enough to determine your likes and dislikes, invest in larger quantities of tea.

I've never had an issue. I've packed my own in cig tubes and put those in an old cig box, I've also just brought a pipe or two and loose. Security never went over every.little.thing. in my bag. I bring in two giant sneak flasks of moonshine every year without issue. I brought in two dozen wownies (salad brownies) my second year. (Plastic baby wipes container, baby wipe on top.)

Be friendly with the security staff and joke with them if you can, make 'em laugh. It distracts them a bit, puts them in a good mood.

A gal in line last year had a water bottle of vodka, not realising it had to be sealed to bring in liquid. I was wearing slip shorts (like bike shorts) under my dress. I just popped her bottle into the leg of my shorts and walked in with it for her.

You'll be fine.

Get two gallon stock pot to brew your tea with sugar. Fill a jar with the sweet tea almost full leaving room for the gallon you are adding.
Wait about 7-10 days and then brew another two gallons of sweet tea. Pour half of the first ferment jar into the second empty glass jar and then split the two gallons of sweet tea between the two glass jars..
The first jar is your continuous brew jar. The second jar you may sweeten with whatever juices. I been doing Honeydew Jalapeño with great results. Bottle the second jar for a few days. I use growlers and honey jars and recycled beer bottles with a bottle capper.
In another 7-10 days you can repeat the process.

I use the provided hot water in our office kitchen. We have two systems -- the water cooler gives water at about 180F and the coffee maker provides plain hot water at a slightly higher temperature (both are filtered). I brew in gaiwan, in a Western-style teapot, or grandpa-style in a mug, depending on what I feel like. I don't find that the slightly-cooler-than-boiling water affects the flavor of black or pu-erh teas, and if I'm brewing a delicate green or white tea, I put the water into a mug before pouring it over the leaves to let it cool slightly.

All this said, I'm a bit of "that eccentric tea lady" at work. I find it endearing and enjoy talking to people who enjoy tea, no matter how they take it. I have a small collection of teaware, including a gaiwan, a portable gongfu set, an English china tea-for-one set, and a glass kyusu and two glass cups.

At my old job, I kept a small electric kettle on my desk, plugged into the power strip with my computer and printer. I would boil it and let it cool off for as long as I needed depending on what kind of tea I was drinking. I was less "eccentric" in that job and drank all my tea out of this mug.

Yes, I get deposits so the water definitely is hard. I get spring water delivered which I could try next time to see if it behaves differently.

The dough seems really good at first, I knead by hand using the technique I saw in one of your linked videos where the guy is working clay. I knead between 5-10 until the dough "bounces" back.

Great post. A good way to avoid spin offs altogether is to use a condiment bottle to apply your fuel. You can apply the perfect amount and won't need to spin off. I recommend that you do this over an empty can or something to catch any drips.

Nissan travel mugs are the best. THE BEST. I've used two different ones, and they have both astounded me. My coffee will sit in a cold winter car for 24 hours, and still be warm. Not even close to hot, mind you, but warm to the tongue. It literally defies reason.

GET A NISSAN TRAVEL MUG and never go back.

This depends primarily on how much you want to brew and what style (batch vs continuous). The easiest first step would be to go with a glass gallon jug. If you want to go a little bigger, get a 2 gallon with a non metal spigot (plastic and stainless steel are ok). Spigots make it way easier to pour for 2F. Not sure it’s worth it for a 1 gallon jug but for sure for 2+ G.

Please shop around. I have no doubt you could get some of this stuff for cheaper. I was restricted in that my only form of currency was Amazon gift cards. Especially the adapter could be built / constructed for much cheaper than I paid.

Additionally, instead of the false bottom / adapter, one could simply employ a Bazooka Screen instead of a false bottom, I have just read that false bottoms are more effective and less prone to problems.


DISCLAIMER - Always do your own research and make sure the parts that you are buying are all compatible and properly sized, etc. etc.

Having said that, the parts I listed above are exactly what I ordered and all fit together perfectly, I just needed to go out and buy a female coupler (to attach the valve to the hose from the false bottom) and a washer (per the included instructions with the valve, which had a additional washer for my configuration).

Honestly, alcoholic beverages inside the polo fields are so expensive that we resorted to these clever "flasks" last year and they worked like a charm! We snuck 4 of them in each day and had a good 'ol time taking swigs from the sunscreen bottles. You run the risk of security catching it, but security is generally very relaxed and the worst I've ever witnessed, or heard of, is them just tossing it.

6 balls around 270g each. After the 12 hour initial, bulk rise - I use this container, lightly oiled - it also makes a great cover for the intervening "stretch and fold" rest/knead periods:

I pour it out and, using a dough knife, eyeball it into 6 pieces, trimming and weighing to get them all close. I then shape them into really tight balls using Alton Brown's method (just ignore everything else he says about pizza), i.e., gently rolling them along a flat surface until a nice, smooth skin forms.

You actually can do that if you have a big enough tea basket or a small enough cup. You do it a little different tho.

You want to put the strainer in the cup or gaiwan first, then put the leaves in the strainer. Then when you're done steeping, instead of pouring the tea out of the gaiwan into the cha hai, you can just lift the strainer out and drink from the gaiwan.

So it's basically like standard western style tea brewing, but with very short steeps and a lot of leaf for the amount of water. I use about 8 grams of tea leaves for 90ml of water and then start steeping 8 to 10 seconds. Every steep I increase by a couple of seconds. You can often get 10 steeps from a tea, which at 90ml of water per steep is almost a liter of tea! For good puerh I sometimes can get 20 steeps or more.

OP's glasses are not too bad looking for whiskeys tbh. It will work nicely with a really high proof dram. Why not pick up a set of 2 or 4 glencairn's to go with current glass set as a just in case. You can get similar looking glencairns as well but they cost a lot more. OR not worry about it, i like having different glasses in my collection so maybe this person will too.

The grey jar is dried lavender I use for lavender tea sometimes. The "french press" is actually a nifty thing for brewing tea.

Electric kettles are probably a life saver in your situation. Then I would do a single serving style brewing container. The teavana perfect tea maker or an IngenuiTea are good picks and more of a one piece type deal. They also have a fine mesh strainer so only the smallest bits of tea dust get through when you are done brewing.

If you want to brew in the mug or cup you will be drinking out of there are a lot of mugs with infusers out there. I can personally say that I love my ForLife mug and infuser. The only things to watch for when looking for a mug and infuser is the size of the infuser basket and the size of the holes in it. You want your basket to be big enough for your teas to be able to float around a bit and unfurl, but you don't want your holes big enough that the leaves or small particles to float through.

I use a 2 gallon glass jar, like this, fill it with sweet tea, and add kombucha. A scoby will form in week or so. Leave it alone for a couple of weeks, and that's really all there is to it for the first ferment. For the second ferment, I put it in 2 liter soda bottles and add what ever I'm using for flavor- really like raspberries. It will be nice and fizzy in a week or so.

If you just want enough for one glass at a time, this hand tool does a good enough job. If you want enough for a round of drinks, this hand crank one does a nice job and has a retro look. If you want to be really serious (and noisy), then you'll want a Lewis bag and mallot to bash your ice to bits. If you're totally lazy and have a few extra bucks, you can buy an electric ice crusher, but they're not very tiki.

My advice for a simple way to brew that is really tasty is: get one of these, learn how to use the gong fu style of tea brewing in it. Your tea will taste less biter, have stronger aromas and you'll get many infusions out of each brew.

They spend plenty of budget on the hero props and the crazy CGI SFX, so the other practical props need to be, well, pretty mundane. A lot of props around the stations are definitely common items that you can find around any modern space.

Some really quick research has shown that this is the cup:

But no research shows me a brown/copper version. Only red and blue and silver.

There's a potential that they used dye or a color insert behind the clear cup to give it the proper color; that or it's actually red but the show's color grading gave it a darker hue.

I would wager that if it's actually got a squishy outer jacket that it's silicone and probably wouldn't accept whatever decals you put on for very long.

Regarding the tea, maybe get big beverage containers like this (http://www.amazon.com/Anchor-Hocking-Beverage-Dispenser-Heritage/dp/B00BWC0E42/ref=sr_1_2?ie=UTF8&qid=1420985567&sr=8-2&keywords=glass+beverage+dispenser) and brew a whole bunch at once? You can probably just stick it in your fridge so it doesn't go bad and only have to brew it once every few days.

It depends on what your brew method is. If you're using something like this it takes 1-2 minutes to make a cup. Follow up cups are even quicker as the leaves have already been prepared.

They're glasses specifically designed for IPAs. They were designed by Dogfish Head, and Sierra Nevada and made by Spiegelau. They're real delicate, but I think they work really well.

I keep it simple - I have a cup, a basket infuser, and the cup comes with a lid that I can sit the basket infuser on when it's done steeping. Here's what mine looks like!

I don't understand the purpose considering most people who tend to really care about scotch use a Glencairn style glass which would never allow for a giant ice ball. Most scotch drinkers I have met simply add a small drop of water to open up their scotch or drink it straight. If you're buying expensive scotch, the likelihood of adding water or ice at all becomes increasingly unlikely.

2 wall is to protect your hand, not keep the tea warm.

basically a heat sink metal surrounded by insulation.
i don't like this product either, because combining

Here's the hardware I ended up with for a simple continuous brew setup. For me, two gallons is a lot for a batch brew mostly just handling the vessel. Good luck! You're mostly limited by your imagination here.

I have that one. It's great, and keeps liquid so warm that I usually have to let it sit open for a while to even make it drinkable. The only problem for me is that the filter is a separate piece and if you want to keep your leaves for a second resteep then that means finding a place to store it in your bag/backpack when its hot and wet. Thats why I'm considering buying the below one.

Hand Cranked Ice Crusher

I switched from a bag and mallet to one of these and never looked back. Also very inexpensive. You do need a stable and very smooth countertop for it to work properly - it attaches with a large suction cup on the bottom.

My wife has the Nissan Thermos 12-oz tea tumbler amazon link. It does have an infuser basket which is why we got it, as we usually drink loose tea. It has very efficient gaskets in the lid & infuser and will never leak (if the lid's on correctly, which can be tricky). The only drawback is that the volume is a bit small.

These are seriously great. I've used them to take pipes into festivals too. Makes it kinda awkward on the walk in, but if you just keep it so that it doesn't stick out, you're good. Haven't failed me once.

I also have this for sneaking in booze in larger quantities. Used it 3 times so far. The first 2 times, no problem. The 3rd time, security felt it on the pat down and mentioned it, but they could tell it was just something squishy and let it go. (they are really only concerned about weapons, but if you are obvious about your stash, they'll jack you)
