Ryzen 3600 is great, it's fine.
MOBO: Asrock b 450 Pro 4. This board is basically a Tomahawk, but with worse VRMs. This does not matter for a 3600. You could a 3700x if you want and it would be fine. The Tomahawk does not have the 5v adressable RGB connector we need. Also, this board grey accents so the RGB will show up better.
RAM: Team RGB RAM. This Ram is fine. Note that you will need to enable a setting on your motherboard called XMP for this RAM to run at listed speeds. This is VERY important as Ryzen loves fast ram. YOU HAVE To enable xmp.
SSD: Yeah this fucking stupid, but it is cheaper then your 970 EVO samsung products are overpriced and you can do better. If you are ok with ditching an RGB SSD then a Sabrent Rocket or the slightly weaker Intel 660p would be fine. Personally, I like RGB ssds. I have 2 SATA RGB ssds.
Video card: Ok, so my understanding of autocad is that it prefers NVIDIA, High end AMD cards like a Vega 64 or Radeon VII can brute force it and compete. But at the lower end NVIDIA is recommend becuase of NVIDIA's CUDA cores. Some cursory googling indicated a 1070 was considered acceptable for autocad at reasonable speeds. The 1660ti is basically the same in terms of power as a 1070. So we go with a 1660 ti, I chose this one so that the sliver accents could reflect RGB.
Bitfenix Enso. I recommend the white version of this case which will make the RGB pop.
PSU: Yeah, you don't need platinum or fully modular. This is top tier PSU, you can see it on the tier list here. Note it isn't on the newer one because it's a bit older, so I linked to the slightly older tier list.
Monitor: why does your wife need a 4k monitor. 4k requires a lot GPU power. If your wife wants 4K for design work, you can go with your monitor over my 1080p monitor. But usually 4k cards are like a 2070super or above. For light gaming at 4K a 1660ti is ok. It should work the games she plays, but nothing Triple AAA will run well unless you go high end on the GPU. On that note, the RX 580 you had above is almost incapable of 4k. I hope you didn't buy a 4k monitor for your son or that would explain a lot of the sluggishness. Typically games aim for 1080p 144hz monitors at 144fps, or 1440 144hz monitors at 144 fps. The Rx580 is 1080p 6o fps card for 60hz monitors, and the 1660ti is strong 1080 144mhz card that can handle some 1440. It can handle 4K but again for lower powered games or for like design work.
Deepcool CF120 RGB fans. These are the De-facto lower end RGB case Fan. Most of the rest is cheap chinesium, and these are good enough. These come with an RGB controller, but to make certain we have enough RGB headers, we will be buying an after market RGB connector device also.
RGB LED Strip. Exactly what it sounds like. Install this last so you can figure where you want the extra lighting.
8 way RGB splitter device. This allows you to split your 5v header on your mobo into multiple signals.
RGB Dummy RAM. This is fake RGB ram to fill those empty slots. Even though it is in black, and your ram is white, Ram installs to slots A2 and B2, and the dummy will be in a1 and b1, which means the white ram will cover it up when looking at an angle. It is fine to leave this off, but man these look sexy.
Finally, if you really want to go stupid all out RGB then the LIAN LI strimer cable
is something to consider. It is RGB 24 pin adapter you plug into your MOBO, and then you plug the PSU into the strimer. I didn't include it because that is starting to get into the RGB ridiculous category.
ANY cable will attenuate the signal, although higher quality cable will attenuate less per unit length. I'm not sure what the max run length is for consumer-grade coax (eg RG-6), but I know the max length per standard for most common ethernet (eg your computer's network card) is 100 meters.
You have a couple options. You could invest in some commercial grade equipment and run a fiber optic line from the house to the cabin. Put the modem in the cabin and then use the fiber to expand to your house. This is probably fairly expensive, but it'd be the most reliable option.
Depending on the lay of the land, you may also be able to use Wi-Fi to your advantage. If you have line-of-sight between the two buildings, and there are not any major obstructions, get a pair of wireless routers (I prefer Buffalo, but there are many) that have external antennas. Replace both with high-gain directional antennas, point them at each other and see if you can get enough signal to make it work.
Also, I just did a quick check- for video applications, RG-6U is listed out to 1500 feet. Note that your cable modem is probably going to require a cleaner signal than standard video, so there's still no guarantee. Make sure you buy a direct burial rated cable. RG-11 is more expensive and harder to work with, but it's higher quality and may be worth checking out.
Some sat TV forums indicate that they've used RG-6 out to about 250 feet, but I'm not sure how signal level on the LNBs compare to cable signal levels. You may also be able to use a cable amplifier like this to boost signal levels if it's not quite good enough. You may just have to buy some cable and see what happens.
Hopefully someone more familiar with cable systems can chime in and give you some better advice than I can.
Talk to the venue, see if there is a better option.

The two amazon things you'll need, the cable you have won't fit with the green one though, it's all males (you'd need one like this instead this But if those are inputs, you're better off just pugging a straight male to male RCA cable

I don’t think there’s a console that does component natively that won’t also do s-video. Definitely do the upgrade though, there’s no reason to use composite on any common console except genesis and NES
Grab an svideo cable for your wii as well. Makes a decent difference over composite. They make ones with composite + svideo outputs if your tv only supports composite. You also won't need a distribution amplifier with this setup.

GV-USB2 is a really solid little device for how cheap it is. Just pair it with the Monoprice Wii S-Video Cable and you'll be good to go. You can plug the S-video end into the capture card and the composite video into the TV. solid capture setup for only ~$40
EDIT - you should also get some RCA piggy back cables so you can run the audio to both the capture card and the tv

You could use some sort of bootlegged system like using this and running these into the back of your speaker.
Here's a tip for streaming on a budget. The Wii outputs both composite (yellow RCA) and S-Video simultaneously, so if you get a combo cable like this, you can feed one type of video output and one audio output (left or right) to the capture device, and the other video and audio outputs to the TV. This avoids the need to buy a signal splitter, and allows you to use S-video for either your stream, or your TV (if your CRT supports it). It does mean that you are only going to be getting mono audio, but that's not the biggest deal for Melee.

Yea, it's hard to find them these days without molded jacks. The ones I got were in a consignment shop, likely originally molded jacks someone had cut off, or made custom to begin with.
