Fear cuts deeper than swords!

Hi, I'm also a beginner who's still pretty nervous around hot surfaces and heat, so I'll give you some tips especially for that.

I have a pair of Ove Gloves that I like because I can stick my hand in the oven without worry, but also because I can grip hot trays better and am less worried about dropping things. Just make sure you take care of them because food sticks to the material a lot, and if they get holey then that's bad.

Use a lot of aluminum foil - it doesn't get hot as easily if you put it in an oven. Better yet, if you're baking/roasting something, you can get this to put (aluminum side down) over baking pans so you don't get food on them and they are easier to clean.

When I first started cooking, I had no idea what things needed high heat or low heat on a stove or oven, and totally messed that up a few times, because people think these things are obvious. I'll just give you a few:

• Grilled cheese should be cooked on a medium to medium-low heat for a fairly long time so the cheese melts and the bread doesn't burn. Try to flip only once.
  
  
• Eggs should be cooked on medium or medium-high heat (probably medium but I like my eggs overcooked), but the pan should already be hot so that you can feel it if you put your hand over it.
  
  
• As per the package directions, cook pasta in boiling water. Start with rice that gives you instructions on how to cook it.
  
  
• If you want to cook vegetables, try slicing and roasting them in the oven in a baking tray on high heat (around 400 degrees F) instead of boiling or steaming them. Some good ones are carrots, potatoes and other root vegetables, and Brussels sprouts.
  
  
• Potatoes can be cooked in the microwave for 4-6 minutes, in boiling water for 20 minutes, or in the oven at around 425 F for an hour, depending on what you want to do with them.
  
  
• Pancakes should be cooked on a medium flame and flipped very carefully. Try making smaller pancakes to start with, they're easier to flip. And the first pancake is nearly always a dud.
  
  
• If you want to cook meats, I'd recommend starting with ground beef or turkey and sautéing it in a pan until it goes from pale pink to brown. Then you can move onto thinly-sliced beef (steak sandwiches), and flattened pieces of chicken (chicken piccata) or pork (schnitzel). That way you get a feel for how long they take to cook before you accidentally undercook a bigger piece of meat.
  
  Slow cookers are good to buy if you want to cook things without worrying about open flames or setting your house on fire. You can leave it on all day when you're not in the home and it'll work fine, most surfaces are cool to the touch, and it's good for beginners because if you're a half hour over or under it'll still work.
  
  Make sure your stove has a vent or a range hood over it or built into the stove. If not, you're going to have to open the windows a lot more to prevent setting off the fire alarm - which you should absolutely have at least one of if your apartment isn't already installed with one.
  
  Does your new place have gas or electric stoves? If it has gas, that's cool, because you can see the flame and you're able to see exactly how hot something is. If not, you may need more adjusting.

Buy yourself a purple brand chair cushion. They make a portable one with handles. I sit all day as a webdev and my ass would hurt but holy hell this thing has been amazing. Super comfy.

Also make sure you have a good chair too. Chairs are super important.

Cloth diapers - flour sack towelsfrom amazon as the stuffers - cheap and clean easily. Bamboo liners for the poop. Rubber gloves for swishing it in the toilet for the parts that don't come off with the liners. Lot's of covers that can be used from newborn to 35 lbs. You can use any bum cream if you use the flour sack towels as well FYI because it doesn't ruin them. Also pick up a couple of these laundry bags. Wipes.

Cleaning is easy - "quick wash" with a bit of soap, then a hot long wash for extra soiled diapers.

Baby nest was nice to have but not a necessity. Blankets/towels can help. Also a wrap is nice for the first 6 months but not necessary.

Gripe water for gassy baby, Punkin Butt teething oil

A pump, even hand pump will be handy. Especially in the first few weeks she's regulating her supply.

Zip up sleepers (snaps suck)

Baby Bag (backpack style)

Don't worry about a baby changing table, you can change anywhere. Don't worry about a diaper genie since you're cloth diapering.

I got a Stargazer for my birthday. AMA.

I received a Stargazer for my birthday in October this year. I've used it nearly every day since. I have 7 lodges that I use extremely less frequently now. Here's what I know:

• It's polished at the factory and doesn't have the rough grainy feel of nearly every other new, modern pan. They still cast it, but it goes through another step.
  
• It has a bronze color. I don't know if it's expected to turn black. Their website pics imply that it won't.
  
• I made two pizzas, one in the stargazer and one in the lodge. The stargazer produced a crispier crust, which I attribute to a slightly thinner material, and therefore less "heat up" time. Maybe it got hotter quicker, and therefore, longer
  
• During French Toast days, the handle of the lodge requires a lodge condom, and the Stargazer did not. It has a funny forked handle, which likely conducts less heat.
  
• It did not pass the egg test out of the box but outperformed my well-used main lodge. I cooked two eggs at the same time, with the same amount of oil. (the lodge may not have been properly cleaned from the night before, at the time, so your mileage may vary)
  
• It's very pretty.
  
  Should you (or Santa) spend $80 on one? Yes, if you're into Cast Iron, and I know all you suckers are, this might be your prized pan. And like any iron, it's generational. Maybe your great grandkids will be using your pan on Mars.

i've been very pleased with my decision to be a respiratory therapist. it's such a nice feeling to help someone that isn't feeling well. i actually had a gentlemen stop me yesterday and thank me for helping his father when he was having a coughing fit and was short of breath. he didn't have to stop and thank me, but he did and it made my day.

anyway... the decision that my wife and i have made is to move to a different city, much larger city so that we can continue our schooling so we can advance in health care. she wants to be a CRNA and i'd like to be a PA.

It sounds like it was more of a compression leak than anything. A compression leak is basically when the baby pees and then lays on it/squeezes the wet diaper for so long that the pee just leaks out of that absorbent layer. I'd add a layer or two, but specifically fold or layer it in a way that there's extra absorbency around the sides of the diaper. You'll probably have to experiment with it a few times to get something that works well. You could try using OsoCozy flats or even some flour sack towels because they're large and you'd be able to fold them in a way to add absorbency to the sides without them sliding around.

Yeah, I only put my wool in the dryer on air dry because it was winter and I couldn't hang dry it. :) Then I figured out that it seemed to affect the waterproofing so I ended up just hang drying it by the fireplace, lol! At least it smelled good after that!

Ha!! I have a friend who's the same and it makes shopping for her birthday fun AND easy. Did you know that you need these oven mitts? Because I'm pretty sure you do.

I'd suggest flour sack towels (Link is to the ones I have from Amazon, but my understanding is that you can get them for about a dollar a piece at Walmart) with covers (I like flip covers but I think the brand is less important).

Flats, like flour sack towels, are multi-purpose, cheap, and super fast to dry. My dryer died on me a few months ago and I realized how much easier the single layer flats were to wash and dry. I agree with the last response that probably 20 or so flats and a few covers would be reasonable, but because they are cheap and multipurpose having 40 of them around wouldn't be the worst thing either!

Lint free cotton dish towels. I don't like the towels that have nap to them, as I like to avoid things that can get hung up in the tines, and nap can get into the breather hole and be caught between the tines.

1. this blender or a similar one. My favorite thing for breakfast is to have a smoothie, but I have arthritis that makes it difficult for me to disassemble and reassemble traditional blenders. These ones are supposed to be much easier.

Basic No-Knead Bread

Slightly adapted from Jim Lahey’s My Bread

Ingredients

6 cups bread flour (recommended) or all-purpose flour, plus more for work surface
1/2 t. instant or active-dry yeast
2 1/2 t. salt
2 2/3 c. cool water

1. In a large bowl, combine the flour, yeast, and salt. Add the water and stir until all the ingredients are well incorporated; the dough should be wet and sticky. Cover the bowl with plastic wrap. Let the dough rest 12-18 hours on the counter at room temperature. When surface of the risen dough has darkened slightly, smells yeasty, and is dotted with bubbles, it is ready.
   
2. Lightly flour your hands and a work surface. Place dough on work surface and sprinkle with more flour. Fold the dough over on itself once or twice and, using floured fingers, tuck the dough underneath to form a rough ball.
   
3. Place a full sheet/large rectangle of parchment paper on a cotton towel and dust it with enough flour, cornmeal, or wheat bran to prevent the dough from sticking to the parchment paper as it rises; place dough seam side down on the parchment paper and dust with more flour, cornmeal, or wheat bran. Pull the corners of parchment paper around the loaf, wrapping it completely. Do the same with the towel. Let rise for about 2 hours, until it has doubled in size.
   
4. After about 1 1/2 hours, preheat oven to 425 degrees. Place a 6-8 quart heavy covered pot, such as a cast-iron Dutch oven, in the oven as it heats. When the dough has fully risen, carefully remove pot from oven. Unwrap the towel and parchment paper from around the dough and slide your hand under the bottom of the dough ball; flip the dough over into pot, seam side up. Pull the parchment paper off, scraping any stuck dough into the pan. Shake pan once or twice if dough looks unevenly distributed; it will straighten out as it bakes.
   
5. Cover and bake for 40 minutes. Uncover and continue baking for 10-15 more minutes, until the crust is a deep chestnut brown. The internal temperature of the bread should be around 200 degrees. You can check this with a meat thermometer, if desired.
   
6. Remove the bread from the pot and let it cool completely on a wire rack before slicing.

Agreed! Though I'd say "as good as old", in the case of cast iron.

I don't get it when people say cast iron is too much work. I haven't even used water or salt in a long time. I just wipe it out (after it's cooled a bit) with a linen cloth I launder weekly. Maybe if there's something crusty on the bottom (pretty rare now) I'll use the spatula or a green scrubby to get it off. I coat the surface with a few drops of oil if it's dry looking. Hot handle? Darp darp. I've done gravies and all kinds of pan sauces in it too without problem.

Back when my pan's seasoning was new, I used to have a non-stick skillet in reserve for fried eggs. No more. Eggs from any pan other than my cast iron skillet are flavorless and boring.

Between me and my wife the pan probably gets used daily. Sure, it takes a while to get to this point, but it's worth it. I've heard of people doing tomato sauces in particularly well seasoned cast iron, but I haven't dared yet. One day.

tl;dr, The less I fuss with my cast iron skillet, the better food it makes.

Ove'Gloves help a ton; but the best practice is to power off the printer and let it sit for a few hours (or over night) to cool down.

I recently got a 2 pack of the Ove Glove and I've really been enjoying them over the standard oven mitt! I like being able to keep some dexterity. I've had pots or pans in the past hit my underarm, but the gloves give me a lot more control over the hot things I'm working with. Also nice if you need to brace your cast iron pans, or move them around a bit while heated. I've been buying a lot of new stuff lately, but I was probably the most surprised by these guys!

The only time you really need to worry about cross contamination is if your towels are coming into contact with raw meat. If you're using proper soap and water or a light bleach solution to clean up, then there is no danger of cross-contamination from towels.

I use these sponges to wash dishes/knives/cutting boards/tools - they last forever and when one does get worn and ratty, it gets demoted to outside/grill related jobs and a new one gets opened for sink and counters:

I use these towels to dry things and for general wiping and cleanup - they can be bleached if they get dirty or are happen to get used to wipe up chicken juice. As with the sponges, when they start to get ratty and stained, they're demoted to outside/grill use and I get new ones for kitchen use:

Outside of that, I use paper towels for just general daily use. I'm fond of the "select-a-size" types so I can tear of a smaller piece for just what I need or to use as a napkin (yeah, we're classy like that around here!). I do use paper towels also for the final clean of the counter each night - I spray the counters down with a cleaner (usually it's diluted Lysol cleaner, sometimes it's diluted Mr Clean - whatever happens to be on sale) and wipe them off with paper towels.

I bought some grill armor gloves from Amazon. Fantastic heat resistance and great friction coefficient, so you don't slip when grabbing things. I use them ALL THE TIMES.

I was 3lbs when I was born and the only clothes I fit into were cabbage patch doll clothes. I was so tiny that my mom pinned my bottom to a pillow to take me to church. I just bought these and they work great. Way cheaper than any other covers I own.

We use these as inserts and they work great. I don’t even shove them in the pocket. I just fold them up and lay them inside the cover and snap them on.

Of course it depends on what setting your hotplate is on, but if it's hot enough to cook, then yes, the handle will get very hot. I use hot pads, or silicone or leather handle covers all the time. There are a couple new skillet makers like Stargazer that make handles designed to dissipate heat, so that might be worth looking into.

We seriously do not have any more room in our kitchen for any new gadgets or anything. The latest thing I got was a Hamilton grill/griddle as a gift from work for my 10 year anniversary. We had to rearrange everything and find a place for it. My hubby is worse than I am though. If it's a gadget and looks cool, he wants it lol!

I will say this though, two of the greatest things we've ever bought - besides our kitchen knives (which are awesome) are these and this.

I really love embroidering on white flour sack towels like these. As far as transferring patterns, there are lots of options. You can buy iron-on transfer patterns from companies like Sublime Stitching, Stitcher's Revolution, Aunt Martha's, and Dover. There are pens you can buy with disappearing ink or special fabric pencils if you want to draw right on the fabric. You can draw or trace a design on paper and then use transfer paper to transfer the pattern you've drawn to the paper. Some people use non-wrinkle polyester fabric for hand embroidery because it means you don't have to iron it when you're done, but I prefer stitching on cotton. I don't use a hoop though, I use a Q-snap frame which doesn't crease the fabric as much as a traditional hoop does.

Try plopping right side up. Get your towel under your hair along your neck and pull it around towards your forehead and tie it up there. Make sure your curls are inside your towel, but not squished against your head or on top of your head. I was getting really tangled, kinky curls when I plopped. Now I just kind of tie my hair into the towel and let it sit in the towel instead.

Edit: For anybody curious... I use these towels . I fold them in half diagonally so they’re a triangle. It makes it really easy to tie up and adds an extra layer of towel to catch the moisture so your towel doesn’t get suuuuper soaked immediately.

I exploded some Pyrex. Not broke...not shattered....EXPLODED. I accidentally turned on the wrong burner and happened to have it sitting on top. When I realized what I had done I grabbed the thing with my Ove Glove and ran it to the sink. There happened to be a little bit of water where I set it and BOOM. Magma-hot glass shrapnel EVERYWHERE. Took 4 hours to clean up.

They are used like flat diapers but they are a lot bigger than flat diapers are. I can still do the origami fold on my 10 month old. You can fold them in the pad fold too, and then tuck them inside a cover like an insert or prefold. They wouldn't be the best option for daycare, a prefold would be better, but they are great for weekends. They also dry a hell of a lot faster.

Get some flour sack towels. You can line a colander and pour the stock through once and it does a great job of filtering out the insoluble bits.


They are cheap, multipurpose and reusable. I rarely have a need to buy cheesecloth any more.

This is the kind I have. Multiple layers of thick leather means you don't even feel heat through it unless you literally just took it out of a 500 degree oven. I also like how eventually the leather molds to the handle making it snug as a glove.

Silicone? I bought these cloth ones and they really work well. The only thing is that on a gas stovetop they need to be removed while the flame is on high or they will begin to burn

I believe you mean the 'Ove' Glove which is good, briefly, for a few hundred degrees, but it's basically just an oven mitt. I wouldn't expect it to handle ash & cinders.

If you stand for more than an hour you'll want a padded mat for your feet. I have this one and it's like standing on a floor made of soft baby squirrels, but there are lots of other options out there too.

Buy these. I've had mine for years and no sign of them wearing down. I use them handling EXTREMELY hot things on my grill (charcoal chimney) and everything in my kitchen as well as pulling things off my smoker. They're phenomenal. $5 per glove and they cover half-way up my forearm and I'm a tall dude.

I use a pair of Ove Gloves. I've never used gloves or mitts before I purchased the Ove Glove, just used a couple dry bar towels. But I've been using the Ove Glove for the same purpose you are using your gloves: moving a hot dutch oven (475 F) in and out of a oven and removing the lid.

Although I have only been using the Ove Glove for a year, I bake almost every weekend, usually bread in a dutch oven. From my personal experience, I can say that the Ove Glove is more than up to the task. No signs of wear yet and protects my hands from the heat well.

One downside is the lack of forearm protection, which can be an issue whenever you are reaching into your oven.

500F is just about right.

I have the same red Lodge silicon handle for my skillet—and I have forgotten to take it off the handle a couple times. Most of the time, it's been no big deal; I've used a hot pad to take the pan out.

But once, I had the broiler on (making broiled chicken with peppers, if I remember correctly). I opened the oven door a couple minutes later to discover that the handle had bubbled, cracked, and turned an ugly shade of mottled brown.

The good news is that you can buy a new handle for $4.

Fuck using paper towels. It's stupidly expensive, not to mention the fact that they are bad for the environment. Just buy cotton "flour sack" towels and wash/reuse them. They will last years. They are more lint free than paper towels anyway.

Also, the entire unit doesn't need to be mopped? That's fucking disgusting. The entire unit needs to be mopped, every single time.
