I was at Best Buy the other day and spotted Steelbooks for Kill Bill Vol. 1 and Vol. 2. I noticed that, strangely, the Vol. 1 Steelbook doesn't actually say Vol. 1 anywhere - it just says "Kill Bill." I took this opportunity to finally have what I've always wanted for this movie, a single release that treats the two parts as what they are: a single movie (Tarantino was forced to split it into two movies because of the run time).
So, I bought the Vol. 1 Steelbook and ordered these disc hubs and made this!
Now I finally have a satisfactory Kill Bill release.
Edit: just noting that Vol 2 in a standard, not Steelbook case, is currently $5.99 at Best Buy and was in my location's bargain bin.
I would personally buy some poster board and trace a laserdisc on it so you have the right size, and then buy some of these stick-on DVD hubs to add to it so you can stick the discs on like in that X-Men trilogy picture.
Also this is a really cool idea, hope you'll come back and show us what you did after you figure it out!
