Yeah, the Spanish took "barabicu" and turned it into barbacoa. William Dampier used the original root word in his writings as a noun for the food that was cooked in that certain way (on sticks or wooden frame around a smoky fire), and so it got into the OED.

Dampier was a really interesting guy. He got a bunch of words into the English dictionary, like avocado, sub-species, cashew, etc through those writings he made on three round-the-world voyages (the first person to go around three times, actually). Guy was a buccaneer, cartographer, naturalist, helped get Botany Bay colonized, and was the reason Captain Bligh went out looking for breadfruit.

His tales were pretty popular at the time and inspired stuff in Gulliver's Travels and Robinson Crusoe. Darwin used Dampier's observations when he was coming up with his theories.
