You could solve that pretty easily using 12V DC LED puck lights.

First, you'll need a 12V DC power supply (also called "LED driver"). I have a couple of these in my house:

Not too expensive, and they support dimming. You can find tutorials on the web, explaining how to add a dimming control to a 12V low voltage LED driver.

You'll need some low voltage wire & connectors, which are available from Amazon and other retailers.
