edit: you might be interested in Balkan Battlegrounds: A Military History of the Yugoslav Conflict, I haven't read it yet but I know it has cool maps and it's presumably well sourced.
There isn't a lot of good reading in English, but I don't speak the native languages so I can't make recommendations there either. That being said:
This is your best bet for an overview. It's out of print, but you should still be able to find copies floating around. It goes into the politics, the lead-up, and a very detailed analysis of the conflict as a whole. It also proved the basis for a great BBC documentary on the conflict by the same name.
This is your best bet for a tactical view. It was written and published by the CIA and is heavily statistical, but in those numbers you see a very good picture of the battle side of the war. Also very rare to see out in the wild, but you should be able to find a copy in a used book store with a good history section (Half-Price Books comes to mind, that's where I got mine).
There's a book that should be translated something like "Sarajevo Siege and Defense", but my copy is in Russian and I don't know if it would be literally translated to English. I can't seem to find it on Amazon, but it should be something similar. Anyway, this is an extremely detailed account of the siege of Sarajevo written by a Bosnian general who participated in it. Worth a read if you can track down the name.
