One a lot of people overlook is just plain old Dawn dish liquid. it's specifically designed to cut through food based grease. Mix it with water, get a disposable scrub brush, and hit those greasy areas

However, I don't "thoroughly clean" my pellet or charcoal grills. It's a grill/smoker, it'll never be or stay "clean" if used. And I use mine multiple times a week. I do, however, do everything I can to keep the insides dry (because ash traps water and promotes rust)

What I do is scrape the inside with a rubber Bondo spreader. It knocks off the majority of the stuff inside, but leaves a "seasoning" layrt that protects the metal, then I vacuum out the ash andf scrapings. I'll scoop out an excess grease from the drip channel on the pellet smoker with a plastic spatula. Again, I don't really want the inside cleaned all the way to paint or bare metal (kind of like a cast iron pan)

For the outside, about once a season/year if it is starting to look too "drippy" (because vaporized grease seems to find the smallest gaps to leak from) I will wash it like a car. A bit of Dawn dish liquid in water, give it a wash, and rinse making sure not to get water inside the pellet smoker (a little won't hurt anywhere other than the hopper, but it's a good habit to just keep the entire inside dry)

Finally, probably the most important part, the grill/grates. I brush them both before and after each cook with this . Maybe once evey couple of years, since mine are "high grade stainless steel" I'll pull them out, put them in a washing machine tray (from home improvement store) and hit them with some oven cleaner
