I don't have the book, but Imaginorphia sounds perfect for you. There are lots of really gorgeous examples on the sub and Pinterest. There are also different versions, but I am pretty sure that is the most popular. There's also Mythmorphia.

I would also recommend Hanna Karlzon who is one of my favorite artists and has great art with thick pages and a hardcover. I only have Daydreams and Summer Nights so far but there's also Magical Dawn and *Seasons, as well as ZWinter Dreamsz (postcards) - you certainly get your money's worth at $10 to $12 on Amazon. (Sorry for the lack of links in this section, I'm all mobile, and trying to link Hanna Karlzon's name freaked everything out.)

Color Odyssey also has similar quality, despite not being hardback and has some of the qualities you're looking for, although I'm not sure if it's fantastical enough.

Do let me know if this link doesn't work, but if you're into mythology, I printed the Goddess Coloring Book onto cardstock, and I've loved it - you get an instant download after you put your CC# in, don't have to wait on an email or anything. Also if you're into goddesses, fairies, women with dragons, generally magical or historical ladies, I can send you my Pinterest. :)
