I don't believe it always has to, at least, if it's not a major ingredient. But if you're trying to go gluten free, have an allergy or a severe case of celiac disease, it kind of defeats the purpose if you eat something even with a small amount of gluten in it. You're trying to keep it completely out of your system.

Also, if you're interested in learning more about what things may contain gluten, I got most of my information from Complete Gluten-Free Diet and Nutrition Guide: With a 30-Day Meal Plan and Over 100 Recipes. It was very helpful in helping me find ways to eat things I like and avoiding gluten.
