Properly managed, rotating cattle/livestock herds actually replenish soils ala Joel Salatin. The Earth already has great mechanisms for producing soils, so my sense is that we should support those mechanisms. Cows Save the Planet: And Other Improbable Ways of Restoring Soil to Heal the Earth is a great book on the subject.

I watched Cowspiracy and got really frustrated when he dismissed Allan Savory's Holistic Management out of hand with an ad hominem, glossing over the fact that responsible range management returns water to the land while providing beef. Factory farms are insanely bad for the environment, but beef doesn't have to be. The Cowspiracy guy just doesn't like that people eat cows. I was vegetarian for 7 years - I get where he's coming from, and still sometimes have issues with the thought of eating animals, but that guy very stupidly conflates the issues of environmental impact the morality of eating cows. He has some good points, but then fudges the facts to make his point, and I can't respect that.

Edit: Check out Cows Save the Planet: And Other Improbable Ways of Restoring Soil to Heal the Earth for another perspective. Again, factory farms are evil, but cattle husbandry doesn't have to be.
