I have/ had the same problem. I bought a DIY mattress w 8'' coils and a 3 in soft latex topper. It was a solid 7/10 on the firmness scale, which is not ideal for a side sleeper. I like the durability of latex/ springs, so I'm fine with it. I bought a microfiber topper on Amazon and it made the bed more comfortable. I also like the fact that years down the line, if the bed does start to get too soft, I can just remove the topper and go from there. Not sure what topper you tried other than memory foam, but something like this might be a good option.
