For Dishonored 1, there's a Kindle/eReader version of the Dunwall Archives which is exactly what you're after -- all of the notes/books from the game presented in an in-world style with a bunch of art and stuff.

I don't think there's a similar book for Dishonored 2, but the Art Book (also available as an ebook) has a little bit of lore/background and may whet your appetite a bit.
