"1 over 3" monitor stands that don't require fixing to walls definitely exist. They aren't cheap but you could probably adapt one to your needs... I'm not sure if not having the extra weight of monitors on either side could effect the stability though.

Ergotech has a pretty nice, dual vert stand with a base so it doesn't need clamping to a desk.
