If you have the choice find a unit with the fan/heating element at the rear instead of the top or bottom. Also square is easier to work with than round. Basically its just a box with a heating element and fan. I have a box style from jerky making, but those tend to be more expensive and I wouldn't suggest one just for steeping liquids.
