Creative teams change often and characters get re-worked e.g. I never cared for Hawkeye until Matt Fraction’s run. Focus on well-received and relatively self-contained stories. Iron Man: Extremis (a motion comic) is available on Netflix, and it's a great, fast background for those that don't have access to the comics. It has Hansen and Killian, as well.
But read this.
Also, the Invincible Iron Man Omnibus 1 & 2 would be a great follow up. He's already been infected by the Extremis Virus at that point. You see Ezekiel Stane and his art of warping Stark tech to turn people into walking bombs (like in the movie). You see the aftermath of Iron Patriot (Norman Osborne--not Warmachine, which was pretty weird) taking hold of S.H.I.E.L.D. and turning it into H.A.M.M.E.R.--resulting in the 'clean slate' you see at the end of the film.
I loved the movie--but it was an odd amalgamation of 4 major arcs.
Five nightmares is the first arc in the Invincible Iron Man run by Matt Fraction. After that, just follow the successive volumes/arcs.
There's another great jumping on point for Iron Man, Iron Man: Extremis, which is the the first arc in the run by Warren Ellis. I started with this and was fine. This run goes on for around 35 issues, after which the title was rebooted with the above-mentioned Invincible Iron Man. Though, it's to be noted that the run by Ellis took place close to the Civil War event, so there are some tie-ins.
A good Spider-Man series to start out with is Ultimate Spider-Man by Brian Bendis. It's not in continuity with the main Marvel Universe, but it's been ongoing for almost 15 years now, and it's good stuff. Start here: Ultimate Spider-Man: Ultimate Collection, vol. 1.
A good Iron Man story to start out with is Iron Man: Extremis by Warren Ellis, which was a partial inspiration for Iron Man 3, along with Matt Fraction's Invincible Iron Man vol. 1: The Five Nightmares, which is another good starter story.
With Captain America, it's not hard to jump into the story arc Captain America: The Winter Soldier, which is the beginning of Ed Brubaker's work with Captain America that heavily influenced the movies. It's good stuff.
Avengers stories that he could read with no prior knowledge I'd recommend would include Avengers: Endless Wartime by Warren Ellis and Avengers Assemble: Science Bros. by Kelly Sue DeConnick.

In addition, since you've already read Whedon's Astonishing, I have to recommend Morrison's New X-Men, the storyline that Astonishing builds heavily from. Claremont's Dark Phoenix Saga is a great classic story, if you're unfamiliar.
As for Wolverine, a recent favorite of many is Old Man Logan. This is a self-contained 'future' story, so it's not canonical, but it's good. The Claremont/Miller Wolverine is always a classic, and heavily influenced The Wolverine.

Pick an interesting character/team and seek their most popular/acclaimed stories. Focus on self-contained, complete stories in one corner of the universe. There will be unexplained references/characters, just persevere or Wiki. Don’t let the tangled web of shared-universe comics overwhelm you. Think of it like solving a jigsaw puzzle one small piece at a time until you finally see the big picture.

My favourite star wars memory is my dad showing me the original trilogy when I was about 6 years old. I remember sitting on the couch with him just blown away by what was happening! I ran around for 18 years afterwards pretending to be a Jedi!... still running around pretending that I am a Jedi.
I actually went to Star Wars Identities twice while it was in town here and both times when I got to choose my profession my friends were choosing things like politician and whatnot... I was like "Dude! When else do you get to choose to be a mutha-flippin' JEDI!?!?!?"
I was also part of the Star Wars scholastic fan club as a kid... I had the coolest stickers around!
FREE COMIC DAY!! WOOOT!! I actually was at my local comic book store when they opened to grab free comics! and to pick up my weekly file that they set aside for me! Such an awesome day of the year!
Favourite comic book memory? Probably when my cousin gave me a copy of the Death of Superman when I was a wee tot. I read it over and over. Started my love of comics! Now I have a buttload! and I get more every week!
Also seeing Stan Lee last weekend was amazing! It was so cool to meet the man himself! Such a nice guy and hilarious too. Plus he took of his glasses so I know what he looks like without them!

I would love either Iron Man Extremis since I wasn't collecting Iron Man at the time and would love to actually read the arc!

For the most part you can just pick a character, look up recommended reading, and pick a series that sounds interesting. Sometimes something happens in bigger events that affect the solo series, but don't worry to much about that when starting out. For Iron Man, check out Matt Fractions run (starting with volume 1: The Five Nightmares ). I've heard good things about Iron Man: Extremis too, but I haven't read it myself
