poaching tray!
I use a poaching tray (more of a steam poached egg, as it is not immersed in the water). It requires so little water because it steams the egg/tray. I use the smallest pan it will fit in, with just 1cm or 1/2in of water. It boils/steams really fast, then I turn the heat down to medium/low. Spray a little cooking oil and crack the eggs in, then put the cover back on. I use dual spoons to get them out.

My mom had an old metal one like this. It is SUPER easy to use. Also who doesn't love having 2-3 eggs, just one poached egg is such a tease. They're SO GOOD!
