Not answering your question because I make all my own sauces around here. You suggest that you make sauces though so have you tried canning? I usually make large batch sauces and bottle them like this: https://i.imgur.com/nQrm71Y.jpg

I don't always label them but I had grown close to 2000 Tabascos and decided to have fun with it. This year I'm growing around 1500 and doing the same.

Canning in bottles or mason jars, small or large, can keep for years. So on a rainy Sunday fire up the pot, make a gallon of the stuff, and store it away in a dark closet. I bottle them in these: https://www.amazon.com/gp/product/B079568NXP/ref=oh_aui_search_asin_title?ie=UTF8&psc=1 with a funnel. I boil them for 10 minutes to set the seal. With verde it's 20 minutes to make sure they're clean. I use a heat gun to seal the red sealer on for about 2 seconds. I have bottles around here that are 5 years old.

I spend like 10 days a year making sauce but have availability of my home made sauces year round. Other than tending to the peppers that is, which is easy, since I made an automated watering system for them. It's just pick, freeze, pick freeze, then make once everything has ripened. Then I age them in big masons for at least a year. I use Habaneros in my verde and lime juice rather than vinegar.
