I would recommend the film The Wind That Shakes the Barley. It's about a Flying Column based out of Co. Cork and stars Cillian Murphy. One of my favorite films. Of course, there's also Michael Collins, with Liam Neeson playing Collins and Alan Rickman as Dev.

One of the pivotal scenes in The Wind That Shakes the Barley was actually based on the real Kilmichael ambush, recounted in Guerrilla Days in Ireland by Tom Barry, who led the Column involved, if I'm remembering correctly. It's a fascinating book.
