There is a book called "Guide to the Colorado Mountains" that has all sorts of trails and off trail routes. 14er.com or SummitPost.org might give you some ideas on what other people are doing. What you are talking about is called class 3 climbing. Not sure if you are only looking for summits or more just off trail. Maybe check out Dora Lake in the Eagles Next Wilderness.
