If you're not planning to do some gaming, then look into

Asus Vivobook F510UA or HP Pavilion 15

I prefer the Asus because of the nicer screen, but the HP is cheaper.

You can just upgrade your laptop storage to SSD, and you will be fine.

However consider looking at these (if you can find these models in your country):

Thanks for your reply! So I'm looking at this model now, but when I try to use the "Hardware Devices" page on the Mint website it's difficult to tell what works and what doesn't:

Ah, you're right! It won't work as a dual-channel memory.

The HP Pavilion 15t does offer that possibility, but you'd also need to replace the HDD with an SSD. I doubt there's an available extra storage slot in there.
