I take Similase GFGC every day in case of gluten, and i believe you can take a bunch after a glutening as well to help alleviate symptoms. Yes, I can eat gluten! It was quite the revelation when I first found out :)

I'm not sure what the specific enzyme is called, but it's the same idea as how people can take the enzyme lactase for problems with lactose. Enzymes do the work to break down the specific protein that they target.

There are various brands on the market, some are expensive and others less so. I use Integrative Therapeutics Similase.
