I made frozen "ice cream" for my husky. It's just greek yogurt (my picky dog does not like regular yogurt) and peanut butter mixed together and frozen in an ice cube trey. You can add a smooshed banana and other fruits as well. Just seconding the raw diet suggestion. Especially for an Akita it should be a very easy transition... they were made to eat meat. We get compliments on our dog's coat all the time and our dirty little secret is we very rarely brush him. It's all him and the raw diet making us look good. It's also readily available food, just make sure any bones or anything that you give him are raw. Once they're cooked they can splinter, raw they are fine (even chicken/other bird bones).

For keeping him cool, I'm not sure what kind of access you'd have to refrigeration or electricity but there are collars that have reusable ice packs that slip into a pocket to keep the dog's neck, and blood to their brain, cool. Also, again depending on what type of accommodations you'll have and how permanent they will be... this summer we got a cool bed for our Akita since we don't have central air and it made a huge difference for his comfort at night. They aren't too big or bulky until you fill them up with water, so you could bring it over with you pretty easily and fill it once you're there. It doesn't sound like it'd work but it makes a huge difference and requires no electricity or anything. Only down side is it's a pain in the ass to have to move around or do anything with once it's filled with water. another amazon link
