Programming audio is not for the faint of heart.
There are tons of audio libraries out there. For example Juce or CoreAudio on OSX. Both well documented.
This is a good book for starting out with CoreAudio.
Mac or iOS I googled 'developer apple core midi'. Otherwise, I would get this book.

This one. It's on the iBooks store and I'm finding it quite convenient on the iPad because of the notes and bookmarks. Plus iPads don't tear like paper does. I don't use Kindle so I don't know if it's on there. It's an absolutely wonderful book though. Be prepared for some completely procedural C styled programming. Brilliant framework that performs excellently (most likely due to the C style).
