I sometimes use jackfruit that I buy from the store, but more often than not I will buy the canned jackfruit that comes in either water or brine. It keeps the fruit from having too much flavor. They sell it in syrup, but that one is gross (at least for bbq). The fruit that comes in brine / water is very good for making bbq in the slow-cooker, and it ends up with a good texture. It's one of those things that you have to work with for a bit (or at least I did!).
The vegan "oyster" sauce I use is Mushroom Flavor Stir Fry Sauce. It doesn't have the fishiness of oyster sauce but other than that it has the same basic characteristics. mmm. if found it at most big asian grocery stores.
I'm super jealous of your LA food scene. I read things about vegan food places there all the time that I want to try.
