Hi, I don't think you'll need to go used or refurbished. The Lenovo Flex 14 is a very good choice for you, since it is a 2-in-1 with a touchscreen, light, and well specced for the price.

Keep an eye on this guy, it went on sale for around $450 on Prime Day and I expect it to go on sale for Black Friday too! I own the Ryzen 7, 3700U version from Costco and I love it! It's got a great Windows Precision trackpad, above average keyboard with backlighting, fingerprint sensor that works well, active pen support, touch screen, and it's a convertible. Battery life is average with around 5-6 hours in my use. Powerful little machine.

Hey, I'm going to update my request. I posted earlier in the week and had time to think this weekend.
Reflections:
General Usage Habits:
Budget: Initially; $400-600; but concern with build quality pushes me towards < $1000
Country: USA ~Getting to a Microcenter, BestBuy or Walmart isn't a problem.
Screen size: 13-14'' -- 1080p; prefer SSD & 8GB of RAM.
Screen resolution: Prefer 1080p with solid brightness & good viewing angles.
Heat:
Sound: I'll likely bring my soundbar/headphones, but sound isn't unimportant.
Touch screen: Depends; I think it's almost mandatory for Chromebooks & less so for laptops.
Battery Life: I want something that's fairly powerful but can last a full school day (5-10 hours).
Weight**: Less than 5 lbs; considering various Chromebooks & Ultrabooks; the lighter the better.

I know that I could get better "value" - with a 10th gen i5 & an MX250 w/ the Acer Aspire Slim 5. The hardware is better, but I find the build quality concerning because this is a machine that'll go pretty much everywhere with me. The Vivobook, while less expensive loses a lot of battery life compared to the UX333FA; which I'm considering picking up used or possibly on Ebay because I love the aesthetic and getting it for ~ $700 is a much more competitive deal for me.
Edit (adding some Microcenter deals) UX333FA-DH51 is @ $800 & HP Spectre x360 is at $850/800 too.
The one linked in the other comment is a good option, but I would suggest this Lenovo Flex 14 because it offers great value for money and it comes with everything you need, AMD Ryzen 5 3500U quad core CPU which is one of the best in your budget and great for your usage, 12GB of ram for smooth multitasking, Good SSD storage of 256 GB for faster boot up and loading, Full HD touchscreen and supports stylus like you asked for and it is within your budget.
Leaving your laptop plugged in wont affect the battery life as most laptops , once fully charged, stop charging and just power the laptop directly from the charger.
As it relates to the system you are seeking, if you could go a few dollars over budget, this Lenovo Flex 14 would be a great pick for watching movies and similar tasks.

They wouldn't do this config if the motherboard doesn't have flex mode. Flex mode allows you to run sticks of different sizes at dual channel mode partially. Older motherboards don't have this mode.
Just see what stick you have in your laptop and buy a 8gb stick of the same model and try it. It should partially run at dual channel. If it doesn't, return it.

It has a quad core Ryzen 5 3500u; it's Vega 8 integrated graphics core is pretty decent for "light games"; similar to a nVidia 940m. The performance is not even close to the 2016 GTX 1050, but getting performance similar to the 940m in integrated graphics is a huge step up. More than enough to play something like the Sims 4 if you are into to that.
This laptop comes with a digital pen which means you can use it to write notes and draw graphs during lectures using OneNote. That is pretty handy for a student.
Lenovo Ideapad Flex 14. It is around $550, was $450 this past summer on amazon. Dual fans, 12gb dual channel memory (4gb soldered, 8gb in slot), 1080p IPS touch display, 256gb m2 nvme, rotates into tablet mode, pen included.

So at 32 years old I finally bought my first laptop/computer... I bought it for old modded games like Diablo 2 and ff7, heroes of might and magic 2/3 and ps2 emulator.
Now onto the actual reason for posting. I'm curious just how far I can push this laptop. I bought it for old games but am wondering if I could run something like the dark souls games or grim dawn at 30fps or better on minimum settings.
Could anyone give me an idea on what are the newest and/or most graphic intense games that will run well enough to play.

Personally, I prefer small pure tablets for note-taking (iPad 2018 in my case) and a laptop as a pure laptop. I have a Thinkpad Yoga X1 and it is little too hefty to use for notetaking or drawing.
If you could add an extra 50 dollars to your budget, the Lenovo Flex 14 would be a good choice. That 12 gb of ram will really help you for lets say, chrome tabs. If your budget is under 500 firm, I would go with this Asus Vivobook. You should also consider Chromebooks, if your workload doesn't require windows as they are solid machines for basic tasks

It has very similar specs to the other one I linked you but with less storage. It uses the same chip as the other one I linked you for processing and graphics. It's an integrated graphics card, but it does more than enough for wow and I've played perfectly fine without any issues on it even in current retail raids from time to time. You won't run on max graphics, but just above MEDIUM graphics is fine for wow. It can also run most other PC games on at least the lowest low settings at a playable framerate.
You can also put more memory into that Lenovo model which is nice.
The one you originally linked is great for general gaming though. That would do much better for anything other than wow that might be more demanding.
