This squared Moleskine notebook is my crack. I freaking love these notebooks. They are really classy, they come in different colors (make sure the notebook is the 'squared' type) and are just a lifesaver for me in terms of documenting everything that I need/want to do. DO IT.
I am going to UCSC for a double major in Computer Science and Robotics Engineering. This, this, this and/or this would really help me out. It's just pens and stuff for notes.

Like stack_cats said, you can get printer paper reams and be set for a while.
Sketch books for practice?
As far as non-sketchbook writing.. I keep boxes from ordering things online and flatten them out. That's fun. Paper grocery bags work too. A big sheet of thin plywood is like $25 bucks and you can write on that forever. I've heard water on an old chalkboard is great practice too.
Amazon, Moleskine, or Leuchtturm1917 are the popular ones and are available online. But most bookstores or stationary stores will carry them (or the Moleskine journals at least).
