Sushi Go! is a quick to teach, quick to play light drafting game. I love it as an intro to the drafting mechanic and as a filler.

10 players: Slide 5 also known as Nimmt 6 is very easy to play, it's a nice mix of luck and skill, so anyone has a chance to win. Also all players put a card at the same time and no one player is eliminated so there is no down time.
3 -5 players : No thanks is also very easy to play, is a push your luck game that can be taught in less than 5 minutes.
Those 2 are my go to games to quickly start a game and get everyone playing with everyone understanding the rules in 2 turns.
