Yes, processed grains are higher GI, but they're not sugar, which (for lack of a better word) is bioavailable much faster.
Don't overthink the substance. My personal choice is typical PWO like Optimum Nutrition After Max, Dark Matter, or simply dextrose powder. To further reduce, the biggest dude I know eats a cupcake or poptart with his PWO shake everyday. The point is to spike your insulin and muscle glycogen as fast as possible, sometimes a choco-taco is all you need.
I will sometimes get headaches after the gym, but it usually takes a couple hours for them to start and then they last all damn day.
I havent' done it with enough regularity to know if it holds any weight, but a couple times I took down some coconut water after the workout and was all good. It is supposed to be a great hydrator. So I'm not sure if it is a hydration thing or not. I normally work out right in the morning so I'm probably a little dehydrated to start.
I normally have one of these shakes after I'm done and it does nothing as far as headaches go.
