Get some rib racks like these and utilize that 22.5" WSM rack space. You can probably fit 5-6 racks of ribs on the top rack of and another 5 on the bottom. Use the 3-2-1 method: that's 3 hours of smoke(225°F) then wrap in foil with liquid of choice(I use apple juice/cider vinegar 1:1) and cook for another 2 hrs, then unwrap and sauce and leave to cook for 1 additional hour. If using baby backs, use a 2-2-1 method instead. The meat should pull back from the ribs when they are done.

I would plan to have 1/2 rack of ribs each per person. Even if your guests dont eat all of them they're very easy to freeze for a rainy day.

Lay it in the middle, lay the packer brisket over the top. As it starts to shrink from cooking you can remove it. And 19+ pound brisket will work fine on the smaller WSM.
