Ligonier has a list of books, as well, but I haven't read some of these, so I won't be helpful on the ones not mentioned here.
Also pick up any systematic theology like Berhof, Bavinck, Calvin, etc. They've got sections on Ecclesiology (Book 4 for Calvin).
