One thing I discovered since making this post is that the ANT+ signal quality is much better if the ANT stick is connected via a short extension cable instead of being plugged directly into the NUC. I used this cable, which is one of the ones recommended by zwiftalizer.com. If you don't know about zwiftalizer.com, it's a useful site for diagnosing Zwift connectivity and performance problems. You can upload the log file from a Zwift session, and it will show you graphs of frame rate and ANT+ signal strength for the session.
