You have a couple of options to drive dual 4K monitors.
I've used all three on my 9550 and they all produce dual 4K at 60Hz. As others have said, the HDMI is version 1.4, meaning that it can produce 4K but only at 30Hz.

I'm considering the same setup and I've done some research into adapters. Thunderbolt 3 docks are really expensive, especially the ones with 2 display ports + others. My plan so far is to buy a dual display adapter for the thunderbolt 3 port and a 4 port usb hub for the usb A port for keyboard mouse, + external storage.

Your laptop supports HDMI 2.0 but I don't know if 2.0 can push enough bandwidth for 1440p @ 144Hz.
However, your laptop's USB-C port is actually a Thunderbolt 3 port! So you can definitely make some headway there, although you'll need a Thunderbolt 3/DisplayPort adapter like this one.

Yes it's for a development environment. I think that startechs adaptors might do the trick, I found this one on Amazon that has a few User Q&A's claiming plug and play support on Ubuntu.

Though, since I wanted to use a double screen I investigated. Thought I had fixed it by doing a thunderbolt firmware update. Which I did the week I moved to a new apartment. Everything was fine for a month, but I had to move back to my previous apartment. The problem started to reappear. So it was environmental, not a software issue. I figure it must be something with the power or interference. It was apparently the later.

You can buy a usbc to displayport/minidisplayport adapter, then connect a mst hub to connect 2 or 3 monitors all at once either directly to two port adapter, or buy an additional mst hub.

LOL they dont even know how to set to default a synapse profile for my keyboard, i dont know how they could answer my questions about PCIe lanes and specific thunderbolt 3 questions.

i understand that the blade uses the latest tb3 version, but if you take a look at these 2 links here, and you scroll down a bit, it mentions that razer blade stealth only supports single display output via tb3
