I personally don't think All-Star Superman is the best place to start for the character. I've seen new readers pick it up and enjoy it, but it probably won't live up to the praise due to unfamiliarity vs the book being a celebration of decades of Superman comics.
Going forward, here are some Superman modern essentials:

That's not what they're going to be doing for Rebirth.
The new thing will be more recent trades (Superman and Arrow 1 just dropped) in paperback FIRST, then an OHC with the first two volumes of their biggest titles later (which I'm psyched for!)

It's not too late at all and Rebirth is the perfect way to start. What I would recommend is:
Keep in mind, the first two steps aren't neccesary at all, if you grab any kind of single issue that starts a new storyarc, noted in the cover top banner (for example, Nightwing 21 is called Blockbuster Part One), you won't feel lost, though I recommended you those two catch-ups so that you get a broader sense of the characters.
The rule of thumb is, comics aren't that difficult, just start reading
So what happened in New 52 is continued through Rebirth up until now and on. But there is a thing: at the end of New 52, a combined Superman story just happened: Final days of Superman (yep you can guess what it means) then DC Universe: Rebirth came then came the new Rebirth Superman title and the Action Comics. If you wanna get the full experience, you can start with New 52 OR just skip that, read ATLEAST Final Days of Superman then move forward into Rebirth. There is another strange storyline called Superman:Reborn that messed things again, won't spoiler anything else rather than the title. As u/colonyofcells mentioned, Men of Steel mini-series (6 issues) is coming at the end of May, if you wanna skip a lot of Superman stories (and Action Comics) then start there and move forward.
Edit: Also there was a story about Lois Lane and Clark just before the Final Days that is important regarding the continuity (if you're interested that much)

Since it seems like you're mostly interested in DC characters I'd recommend checking out the current Rebirth Series. Now I'm only familiar with Batman and Flash, so I can't speak to the quality of the other series but I've enjoyed both of them so far.

As for the best place to buy comics I recommend Amazon and Barnes & Noble as they are generally pretty cheap and run good sales fairly often (especially Barnes & Noble).

Batman New 52 Vol. 1 Court of Owls, it's Batman at his best investigating an old Gotham conspiracy.
Hawkeye Vol. 1 My Life as a Weapon, it's about what Hawkeye does when he's not an Avenger. It has some really amazing art.

Looks like you're referring to this one, which will be out in September.
Since that has Action Comics #973-976 and Superman #18-19, wouldn't I want to read the Action Comics and Superman Rebirth trades before that (e.g., Action Comics Vol. 1: Path Of Doom and Superman Vol. 1: Son Of Superman and the ones that follow those)? Or is all that stuff just standalone stories?
What about Superman: Lois and Clark?
I could list pages of recs if you wanted it, but I don't want to dwarf you with too much material thrown at you at once. If I had to recommend one particular point though, I would say start reading around the beginning of the Rebirth era, with Peter Tomasi's run on Superman (first trade here) and Dan Jurgens' Action Comics (first trade here). If you want to read a small prequel on some of the events leading to this story, you can find that in the mini-series Superman: Lois & Clark, however that's not entirely necessary to understand the story. Also, it helps to have at least a brief understanding of the Death of Superman story-arc, and the single-issue story What's So Funny About Truth, Justice, and the American Way? (Action Comics #775).
This era of Superman comics is fairly recent, and focuses on the new status quo of Superman as a husband to Lois Lane and a father to their ten-year-old son Jonathon. It finds new ways to challenge Superman physically and emotionally without getting away from his core character.
Percy's Green Arrow, Tomasi's Superman alongside Superman: Lois and Clark and I'm waiting for Wolfman's Raven to come out as a trade.

A volume is whatever ends up getting printed in a trade paperback (volume can also refer to an entire series - the Superman title published as part of the New 52 is Superman Vol 3, because that's the third time his comics have started over from issue 1). Sometimes a trade will collect a single arc, sometimes it will collect multiple shorter ones. For example, with the current ongoing Superman title, Superman Vol. 1: Son Of Superman collects a single arc while Superman Vol. 2: Trials of the Super Son contains a one-shot issue and then three two-issue arcs.
