The one book that comes to mind is The Swift Developers Cookbook by Erica Sadun https://www.amazon.com/Developers-Cookbook-Content-Program-Library/dp/0134395263
Of any of the books that come to mind this is the one that focuses the most on pure Swift concepts and leaves aside iOS and Mac API usage. For a very technical book it is well written so I would recommend taking a look at it. It is not exactly targeted for beginners so some existing knowledge of basic Swift concepts is going to necessary.
