Dissection puzzles are indeed generally easy to reproduce: The most well known one is probably the Tangram. You can find a lot of books about it and also online puzzles, with various difficulties of tasks. One of my favourite (and probably the most comprehensive) book is Tangram by Joost Elffers. It is written in german and dutch I think, but if you don't understand either it doesn't matter since it largely comprises all the "challenges" and solutions.

If you're looking for more advanced mechanical puzzles, like interlocking burr puzzles, then http://puzzlewillbeplayed.com/ is a huge database of puzzles like those.
