Relatively simply: all related planning is usually kept top secret, limited to very few conspirators.
Once the coup is launched, majority of involved troops rarely has any kind of clue what is actually going on. They follow orders of their superior officers.

Slightly different are coups where there are entire units that turn against specific party (say: the government). Such coups are rather rare, perhaps even 'old-fashioned' nowadays when major 'ideology' is 'money'. Still, such coups are the easiest to organize, and usually the most successful, too.
