Relatively simply: all related planning is usually kept top secret, limited to very few conspirators.

Once the coup is launched, majority of involved troops rarely has any kind of clue what is actually going on. They follow orders of their superior officers.

For what was probably a perfect example of such a coup, see The 1989 Coup d'État in Paraguay - where even the conspirators weren't all informed about who-is-who between them: instead, each was assigned a code-name.

Slightly different are coups where there are entire units that turn against specific party (say: the government). Such coups are rather rare, perhaps even 'old-fashioned' nowadays when major 'ideology' is 'money'. Still, such coups are the easiest to organize, and usually the most successful, too. For a good example to this topic, see Chile 1973: The Other 9/11. To make things even better: in that case, the 'top conspirator' was originally perfectly loyal and publicly supportive for the government; he was also the last to join the conspiracy (and not the least happy about it). But, once he joined, he also took over...
