I don't know all of them but the guy who did the voice of the heavy came into our CSE Animation class a few times. He had obviously seen a lot of the game's material but as I recall he said he didn't play. (This was a while back, before most of the new content like the Heavy patch came out).
The reason he was in was to serve as a face model for a man named Gary Faigin (Link to his book on Amazon). Gary was the guy who taught the valve team facial expressions for TF2. The "Meet the Heavy" video was actually just a proof-of-concept test for how their new system (based off of Gary's stuff) was going to work. We showed him meet the Engineer and Soldier, which were the only ones that were out at the time. He had never played the game or seen any gameplay footage really.
On a side note, if you read that book you'll know exactly how Valve's facial animations work and why. It's very interesting if you're into art/animation. Coolest class i took in all of college.
