Well, there's a lot of books on philosophy of mind one can read that are useful. And yeah. Few people in philosophy would say that its meaningful to say we are only chemicals. Since that's meaningless. Describing what something is made of doesn't fully capture the pattern it is in or what the value of that pattern is. Its just something people say since they think it makes them look smart when in actuality it does the opposite. Since there's a billion books on philosophy of mind though, before getting random ones it would help to know what parts of it you are even most interested in.

Here are some more books on panentheism though that I've read. They're all good. You can look through them if you want more suggestions. Though the first books I showed are ones that I think are better.

This one is an anthology. It has short snips from multiple authors.

This one is about both pantheism and survival past death. Its a good book, but its more about the idea of survival past death than it is pantheism.

This is a book on pantheism by the physicist Schrodinger. He doesn't admit it in the book, but his physics led him to it. (I could explain why if you are interested). Its good, but its disappointingly short. And since he doesn't admit what about his physics led him to it its missing the part that really should be included.

And this one is a book about the pantheism of the psychologist carl jung and contains some metaphorical writings by him. The author of this one is a little sketchy, but does a good job summing jung up.
