As a Canadian, I appreciate your desire to learn more about my country's history. I wish more Americans develop that same desire. The best that I can think of, right now, is the novels by Pierre Berton. Specifically, The Invasion of Canada (1812-1813). The Invasion of Canada is the overview of the war of 1812 between Canada/Britain and the U.S. (although, Canada wasn't technically a county until 1867). But I recommend it any-ways, since it involves an American war that doesn't get a lot of press south of the border.
As for a book that gives an overview of Canadian history... I can't think of any at the moment (besides the many excellent novels by the aforementioned author) But one aspect of my country's history which I find fascinating (and you may to) is the province of Quebec, it's Sovereignty Movements, the FLQ crisis which escalated to the point where the Prime Minister at the time declared the War Measures Act (Martial law) and Quebec's latest referendum.
Pierre Berton covered this topic thoroughly in his two books. The Invasion of Canada 1812-1813.
It gives a comprehensive history of the relations between the Americans and the Canadians during this time. It also gives a history of the bona fide problems that the Americans had with the Indians and the gross injustices the Americans did to peaceful tribes which ultimately brought Tecumseh and his followers into alliance with the British and Canadians.
Without these Indian allies, Canada could not have withstood the American's half-hearted attempt to conquer us at the start of the war.
The French Canadians did fight for Canada during this war but were content to sit back and be neutral at the start. They did not become involved until after General Hull allowed his troops to sack and burn their settlements.
