Alot of these questions are actually brought up in the book Time Travellers Guide to Medieval England. According to that author, the OP's cynicism (as previously mentioned) is true-ish. If I remember correctly, his findings showed that childhood-young adulthood mortality was the issue. Basically, if you were going to die, you had like a 60% chance of it before you were 20. Once you crossed that mortal Rubicon, you would probably live to your 40's-50s.
