Here's a fun one on cetaceans. I love this book more than anything!

I tried finding something similar for fish and found this... the pictures seem awesome.

This one is a bit more wordy... but still encyclopedia format, which is simple, easy, and straightforward. Your niece can find one she likes and read about it.
