If you want an in depth understanding, I recommend a thermodynamics textbook. This is the text that was used in my undergrad curriculum and jet engines are discussed towards the end of chapter 9.

Others who went to school for aerospace will probably have better in depth books focusing on jet engines, but if you want to understand the principles, you'll need thermo.
