Others have already answered the bulk of your questions, so I just wanted to add that while docked, you can have a wired internet connection via a small USB adapter. (I'm using this one) It's worth it for me, but our internet isn't spectacular and my dock is conveniently at my computer next to the modem. It's a good investment if you plan to play online a lot, or if you buy games digitally and therefore are expecting to have large downloads.
Also, there's currently no subscription cost for online play. Nintendo is planning to roll that out later (I believe next year sometime)
Lastly, I recommend getting a smaller, more portable charger if they plan to take/use their Switches outside the home a lot. There are some (3rd party, usually advertised for high-end non-Apple phones or Macbooks) that will fit in the travel cases, which is super convenient. Also so that you don't have to deal with disassembling the dock station whenever you wanna take the Switch out with you. (I'm using this charger)
You can use this one for example, it's the one I use and I've never had any problems with it.
Maybe you mean an entire dock though? The panda global one is supposed to be good
