I haven’t seen any videos, but I’ve read this absolutely fantastic book called Unpacking “Chuck”: The TV Series Interpreted
I highly recommend giving it a read, I enjoyed it thoroughly.

I just recently finished the show, and am having withdrawals as well. I've been contemplating restarting the show, which I think I'll likely end up doing soon.
The 15 webisodes they released are pretty awesome, I'd recommend you give them a shot, here.
Also I've heard that the Unpacking Chuck book helps, which I have ordered and I'm waiting for it to come in.
I never thought about watching the Comic-Con videos, interviews, etc - I think I'll do that tonight. Any recommendation as to where I start? The only Chuck related things I've watched are the show and the 15 webisodes!
I'm not 100% sure what exactly you're looking for, but there are a couple of books somebody wrote analyzing the characters and themes of the show.
Unpacking Chuck and Unpacking Chuck 2.0. Definitely worth checking out in my opinion.
